Easy All in One Pan Meal
Back in the 1960s, this was really an inexpensive meal and we had it many times during Spring and Summer.
Grandma made everything from scratch including the sun-dried tomatoes, pasta and we always used fresh peas.
We very seldom had the money back then for using anything other than tuna, sometimes canned salmon was used.
Since those days, I have also made this dish with smoked salmon and it's wonderful if you're a salmon lover.
When I am in a hurry this is my go-to meal.
Grandma Made Homemade Fettucine
In Italy where grandma came from her Region in Rome, Italy made Fettucine Alfredo was much different than here in America.
The Fettucine noodles were the same macaroni, but the way it was prepared is so different.
This dish is simple, great when the pasta is homemade and reminds me of her when I was a little girl.
Everything was made from scratch and homemade.
My mom and grandmom even went peas picking and those were shucked and actually fresh!
If you are lucky enough to have a garden with fresh peas, this is the perfect Spring first dish to make.
Dad had a wonderful garden and grew them every year.

- Romano/Parmesano cheese grated

This is the perfect Spring and Summer pasta dish. We served this during Lent when meat isn't allowed in our Catholic family. Grandma always made homemade pasta and mom used fresh peas. It's a childhood favorite memory.
ingredients:
- 1 pound fettuccine homemade or store-bought
- 3 tablespoons olive oil extra virgin
- 4 garlic cloves minced fine
- 2 cans of Italian tuna packed in olive oil drained or Smoked Salmon works great!
- 1/2 cup sundried tomatoes or fresh diced plum tomatoes (optional)
- 1/2 cup Pinot Grigio white wine
- 1/2 cup heavy cream
- 1 cup fresh peas or frozen
- 1/2 cup Romano/Parmesano cheese grated
- salt, pepper and red pepper to taste
- 1 cup chopped fresh basil for garnish
- Optional: substitute peas for any vegetables, broccoli, carrots, peppers, mushrooms or anything else you prefer.

How to cook Tuna and Peas Skillet
- In a deep nonstick or cast-iron skillet, saute the garlic for 3 minutes with the extra virgin olive oil.
- Add the tuna and tomatoes stir to heat them through.
- Add the wine and cook one minute then add the cream.
- When bubbles start to form, stir in the cheese, add all seasonings to taste.
- Fold in the peas and then toss the drained hot pasta with the sauce.
- Sprinkle with more grating cheese and garnish with chopped basil.
