Homemade Tortellini Pasta

Homemade Tortellini Pasta is much easier to make than you think!

We love to make these around holiday time or special birthdays.

Making them from scratch is super easy and taste so much better than store-bought.

Topped with sauce then baked is another nice change to just a bowl of pasta with sauce.

These taste great even with Alfredo Sauce or Vodka Sauce and easily can be changed to another new pasta recipe.

Pasta Dough Quick Tips



The dough is very easy to handle rolled out in sheets around 1/4 inch thick.

Keep the dough covered with a wet towel to keep from drying out.

A two-inch circle is just the right size, before I purchased that size I used a shot glass.

When boiling, the pasta is done in 4 to 5 minutes when they float to the top always salt the water,

Other Tips and Additions:

  • mushrooms chopped and herbs
  • lobster minced and ricotta
  • seasoned mashed sweet potato instead of ricotta or regular mashed potatoes
  • crushed meatballs with chopped spinach
  • TIPS:

  • make ahead of time and freeze it
  • freeze first before cooking
  • keep the dough covered so not to dry out while making
  • do not overstuff with filling

Homemade Tortellini Pasta

This is a fresh pasta dough stuffed with a ricotta filling with step by step instructions on how to make this easy tortellini recipe. After the pasta is made freeze on a cookie sheet until solid and store in freezer bags until ready to use. Super simple.

Ingredients

  • Tortellini Dough:
  • 2 cups flour
  • 3 eggs
  • 1/2 teaspoon salt
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon water or more if the dough is too dry
  • 1 round 2- inches sized cookie cutter
  • 1 beaten egg white for sealing
  • Filling:
  • 1 cup whole milk Ricotta
  • 1/4 cup shredded mozzarella and provolone blended cheese
  • 1/4 cup grated cheese
  • 1 teaspoon granulated garlic
  • 1/4 teaspoon salt, pepper or to taste
  • 3 teaspoons finely chopped fresh parsley 
  • mix together in a bowl and set aside

Instructions

  1. Place the flour in a large bowl, put the eggs in the middle and add the salt, water, and oil.
  2. Mix and then knead into a smooth ball, add more water if needed. Rest for 30 minutes covered.
  3. Roll the dough out thin in sheets and cut into 2-inch circles.
  4. Add a 1/2 to less than a teaspoon of ricotta filling recipe.
  5. DO NOT overfill them or they will burst in the water.
  6. Fold over like a half-moon shape then join edges to make a circle.
  7. Press the edges firmly down to seal.
  8. I like to brush them with beaten egg whites.
  9. Place on a parchment paper-lined cookie sheet and freeze until solid.
  10. Add to freezer bags after they are frozen.
  11. To Cook the Tortellini:
  12. Boil pasta in salted water, they are done when they float to the top around 15 minutes.
  13. Removed with a slotted spoon or pasta strainer do not rinse.
  14. Add sauce to the top with Pecorino Romano Cheese.
  15. For Baked Tortellini Recipe:
  16. Fresh Tortellini (see below for recipe) or Frozen Store-bought tortellini
  17. Marinara Sauce
  18. Mozzarella (whole milk shredded)
  19. Grated cheese
  20. Parsley chopped
  21. Boil pasta as directed above.
  22. Drain.
  23. Add the fresh marinara sauce.
  24. Top with mozzarella and generous amounts of grated cheese.
  25. Bake for around 20 minutes until cheese melts then turn the broiler on for a few minutes until cheese starts to brown.
  26. Optional Fillings:
  27. mushrooms chopped and herbs
  28. lobster minced and ricotta
  29. seasoned mashed sweet potato instead of ricotta or regular mashed potatoes

  31. any chopped meats cooked
