I make a large pan sometimes eight chicken breasts cut into cubes.

Even though these are a baked version skewer kabob, you can still use this great marinade and grill them if you prefer.
You could also use any kind of boneless meat cubes you prefer, chicken, lamb, beef, deer meat. The marinade is universal!
Use this marinade for your grilled or indoor baked use.
Of course for all the fried food, not health-conscious folks out there, saute your chicken in a little olive oil on top of the stove, cool then thread no problem!
These taste great plain or with your favorite barbecue sauce or whatever, you like on your chicken for dipping them in!
Vegetables to Use
If you decide you want to use vegetables in your skewers and not just meat, then use grape tomatoes, any cooked vegetables, steamed mushrooms, to the threaded skewers and you can use other raw vegetables like peppers.
We also like steamed zucchini, broccoli, and carrots wedges added to the threaded skewers for a great little kabob!

These are baked marinated Chicken Skewers that are a healthier alternative to grilling or frying. Indoor grilling in the oven never tasted so good!
ingredients:
- Marinade Recipe
- 2 cloves garlic, chopped
- 4 tablespoons olive oil
- 2 tablespoons chopped fresh parsley
- 1 tablespoon fresh chopped basil
- 1/2 teaspoon oregano
- 1/4 teaspoon garlic powder
- 1/4 teaspoon rosemary
- 3 tablespoons lemon juice
- 1 tablespoon lime juice
- 1/8 teaspoon pepper
- 1 1/2 pounds boneless chicken breast meat or pork cut into cubes
- Optional: 1 tablespoon of Liquid Smoke
- Vegetable ideas, raw peppers, grape tomatoes, cubed cheeses, steam vegetables of any kind
instructions:
How to cook Baked Chicken Kabobs
- I marinate the chicken and add to a freezer bag until ready to use, then just thaw.
- When ready to use I take it out the night before and thaw in the refrigerator.
- It's all ready to bake and then I spear the chicken after it's cooked and make baked kabobs!
- If you want grill marks to really fool them use a cast-iron grilling skillet and bake them in it for that charred look.
- Place all ingredients a freezer zip lock bag and marinate for 3 to 4 hours or freeze until ready to use. (Add the liquid smoke fresh not frozen before cooking them if using)
- When you are ready to use, place on a deep cookie sheet lined with parchment or 13x9 baking pan.
- Juice and all bake at 400 degrees around 25 minutes until juices run clear in the chicken.
- Cool thread with short skewers or just toothpicks as an appetizer.
- Terrific dipped in orange marmalade or even marinara sauce.
