This Americanized Tuscan Chicken is basically a copycat from a popular Olive Garden restaurant and slightly adapted without the pepper strips with added spinach and sun-dried tomatoes.

This is a Tuscan dish made with a rich cream sauce, fresh spinach leaves, and sun-dried tomatoes
Ingredients
- 2 boneless, skinless chicken breast
- 2/3 cup all-purpose flour
- 3 1/2 tablespoons unsalted butter
- 4 garlic cloves minced
- 1/4 cup sun-dried tomatoes (packed in oil) thinly sliced
- 1 1/2 cups heavy cream
- 1/4 cup Pecorino Romano cheese grated
- 3 cups of fresh spinach leaves
- salt and pepper to taste
- 2 teaspoon granulated garlic powder divided
- Optional: 8 ounces of sliced mushrooms ( I did use these) or you can use red or green sliced bell peppers for an additional change up of flavors
Instructions
- On a cutting board slice the chicken in half the long way.
- Shake each piece in a mixture of flour, 1 teaspoon of granulated garlic powder, salt, and pepper.
- In a large skillet (that can accommodate 4 pieces of chicken comfortably), melt the butter.
- Once the butter is melted add the chicken.
- The chicken should sear for around 3 to 4 minutes on each side.
- Set the chicken aside in a dish and keep warm.
- In the same pan add the rest of the butter with garlic.
- Saute this for 3 to 4 minutes.
- Add the sun-dried tomatoes, (mushrooms if using) the other 1 teaspoon of granulated garlic powder, salt, and pepper to taste.
- Stir in the cream and simmer for 4 to 5 minutes.
- Add the cheese, mix then stir in the fresh spinach leaves.
- Place the chicken back in the pan and warm gently for 4 minutes then serve.
