Buckeye Peanut Butter Candy Fans
I don't know about you, but rolling dough, dipping in chocolate and all the time that takes, is way to long for my patience with wanting a special treat.
These buckeye bars are simple, crust, filling, topping, cut, and voila you're done after they refrigerate for only 45 minutes or less.
Parties, holidays, events, and just something to bring to your next outing for even picnics, these are always a huge hit!
Peanut butter can be an issue for some folks, so substitute almond butter or cookie butter.
Not a problem, still a delicious no-bake treat that everyone will love.
Making the Crust
The easiest way to get a perfect crust is to put it in the food processor and pulse the cookies until fine crumbs appear.
Add the melted butter and that's it, what could be easier?
Just pat down the crumbs into a lined oil-sprayed pan.
The best part is, you really can use any cookies at all, my son loves this recipe with nutter butter!
Melting the Chocolate
I put everything into a glass bowl, then place the chocolate in the microwave for 1 minute at a time.
Check it and stir, once it's melted enough, just fold in the peanut butter.

- Always spray your tin foil
- You can also use parchment paper
- Use a good-grade chocolate
- Use a food processor to crush the cookies you use

- Use a plastic knife to cut these or for clean cuts dip your metal knife in hot boiling water between cuts

No-Bake Buckeye Bars

These are the easiest peanut butter buckeye bars ever! They have an oreo cookie crust, smooth popular kind peanut butter filling and topped with rich smooth peanut butter and semi-sweet chocolate on top! Done in less than 30 minutes and no-bake!
ingredients:
- Prepare Your Pan:
- Line a 13 x 9 baking pan with tin foil sprayed with cooking oil.
- Crust:
- 3 cups crushed Oreo cookies of any kind( I used peanut butter filled), vanilla wafers, chocolate graham crackers, or regular graham crackers
- 1 stick (1/2 cup) butter melted
- Mix together and set aside.
- Filling Layer:
- 2 cups powdered sugar
- 1 1/3 cups peanut butter
- 1 stick butter melted
- Mix all together and set aside.
- Chocolate Topping:
- 2 1/2 cups semi-sweet chocolate chips or another good-grade chocolate you like
- 1/2 cup peanut butter
- Place in the chocolate in a microwave-safe bowl for 1-minute intervals stirring and checking until melted.
- Stir in the peanut butter ( do this right after you spread the filling on top of the crust,)

How to cook No Bake Buckeye Bars
- Assembly:
- Pour the crumb mixture into the prepared lined pan.
- Spread the filling over the crumb mixture.
- Pour the melted chocolate over the filling.
- Refrigerate for 45 minutes.
- Cut into squares.
- I store these in an airtight container in the refrigerator for up to 1 week.
