Using Leftover Turkey



Turkey and dumplings is a warm and hearty dish that is prime for using those Thanksgiving turkey leftovers.

This is pure comfort food in a bowl and a great use for making a brand new meal from that holiday meal.

As an added bonus, you can add leftover corn, peas, carrots, green beans and whatever else you like in a dumpling style stew, or leave it plain it's your call.

The great part about using this recipe is you can use any turkey or chicken leftovers that you may have and makes a great dinner for that fall cold night when you want a rib-sticking meal.

Sherry makes a nice flavor addition however you can use any white wine or just more broth, check out the recipe below it's easy.

It sure is a crowd-pleasing meal to use up the rest of that turkey and certainly comfort food.

Homemade dumplings oh yeah, it just doesn’t get much better than that.

This meal is very satisfying, not to mention completely delicious and exactly the kind of meal when those cold winter days have a quick temperature drop.

Leftover Turkey after a holiday can be another new meal by making this stew-style delicious comfort meal using the leftovers. Add the dumplings for an all in one pan meal

Ingredients

  • Dumplings
  • 2 cups flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 2 eggs
  • 1 teaspoon granulated garlic powder
  • 3/4 cup buttermilk or whole milk mixed with  1 teaspoon of  white vinegar
  • 1 teaspoon each garlic powder, parsley
  • 1/2 teaspoon black pepper
  • pinch of cayenne powder
  • Dumpling Sauce:
  • 6 cups turkey leftover broth or use chicken broth
  • 1 cup sliced carrots
  • 1/4 cup chopped celery
  • 2 medium-sized potatoes diced
  • (optional) 8 oz. mushroom slices, peas, corn, or any other kind of vegetable you like
  • 3 minced garlic cloves
  • 2 tablespoons sherry (secret ingredient)
  • 1/4 cup heavy cream
  • 6 tablespoons flour
  • 1 or 2 fresh basil leaves chopped
  • 3 tablespoons butter
  • 1 tablespoon olive oil
  • 5 cups of cooked Turkey boneless

Instructions

  1. Dough for Dumplings:
  2. Mix the dry ingredients and herbs, spices in one bowl and the wet ingredients in another. 
  3. Pour the wet ingredients into the dry just until moistened and all come together.
  4. Cover dough with a wet towel and set aside.
  5. Dumpling Sauce:
  6. In a saucepan melt butter, add the oil.
  7. Sauté the garlic and any of the vegetables you prefer (if you don't have any cooked throw in a bag of frozen mixed vegetables) for around 2 minutes.
  8. Add the flour and stir.
  9. Pour the broth into this vegetable mixture.
  10. Add the sherry.
  11. Simmer for 15 minutes then add the heavy cream.
  12. Fold in turkey. Come to a simmer.
  13. Add the dumpling mixture around 2 tablespoons full at a time and cook until they are light and puffy around 15 minutes.
  14. For thicker sauce continue cooking until liquid boils away.
