These muffins are great warm with butter or a cold and nice addition to fall recipes along with apple pies, apple cider, apple scones, apple donuts, and even apple stuffing to use up those harvested apples.

Use any kind of cooking apples you like, I prefer a tart one over the sweeter kinds and most of the time use Cortland or Mcintosh, as the sugar enhances the flavors and they're softer in texture as they cook.

- substitute fresh peaches or pears for apples
- strawberries and raspberries are also a good substitute
- mango diced
- papaya diced and fresh cranberries can also be used

Tips
- Do not overmix the batter
- soften the butter
- store muffins in the refrigerator in airtight containers
- these are delicious apple butter, regular butter, honey, and jams
- if you decide to use paper liners I give them a quick spray of cooking oil so they don't stick to the paper or you can bake them in muffin tins, pop them out, then place them into the paper linings for presentation purposes

Easy Homemade Apple Pie Sour Cream muffins with an apple pie topping, perfect for the first harvest during the fall season. They smell fabulous and taste even better!
ingredients:
- Batter:
- 1 cup sour cream
- 2 eggs
- 1/2 cup white sugar
- 1 stick (1/2 cup butter) softened
- 1 teaspoon pure vanilla extract
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 2 cups all-purpose flour
- Topping:
- 1 or more large apples pared cored and diced McIntosh, granny smith or Cortland
- 1 teaspoon cinnamon or more to taste
- 1/2 cup brown sugar
- Dot with a little butter on each one
- Optional: 1/2 cup chopped walnuts, raisins, or a mixture added to the apple
instructions:
How to cook Apple Pie Sour Cream Muffins
- In a large mixing bowl, place all wet ingredients in the bowl.
- Slowly add all the dry and mix with wet ingredients until a thick batter is evenly blended.
- Do not over mix the batter.
- Place batter in a lined cupcake tin or use the liners after as stated in my tips ( I use an ice cream scoop) and put 1 teaspoon of apple topping on each muffin,
- Dot with the butter.
- Bake in 350 preheated hot oven until brown around 25 minutes. Makes around 12.
