You can even buy all the ingredients and assemble before leaving the house and just pop it in the oven when you get home.

Whenever I am in a hurry and also need to get rid of leftovers, here is my solution, pot pies.
I always have refrigerated pie crusts or even frozen pie shells in the freezer.
Some of the ingredients you can change up with no problem, especially meats.
I have used leftover boneless pork, chicken, and even steak to make these easy casserole pot pies!
Easiest Meal Ever Making Semi-Homemade Pot Pie
- premade refrigerated pie crust
- leftover meats IE chicken, turkey, beef
- frozen or canned mixed vegetables you prefer
- bottled or canned gravy
I just love how the crust bakes into a flaky pastry filled all in one meal.
You can use any kind of gravy also, chicken, turkey, beef, I keep jars on hand.
Even though this is semi-homemade, it sure is a family favorite.
Everyone loves this pot pie when I make it and they don't have to know it's not from scratch.

Easiest Pot Pie Ever
This recipe is semi-homemade using all easy-to-find simple pantry ingredients premade to make a tasty pot pie in less than 30 minutes
Prep time: 10 MinCook time: 30 MinTotal time: 40 Min
Ingredients
- 2 cups leftover chicken or turkey ( use leftover beef, pork, lamb or venison)
- 2 cups of mixed frozen vegetables
- Note: add boiled or canned cubed potatoes, carrots, corn, peas, whatever your family prefers)
- 1 12 ounces jar of chicken or turkey gravy (or beef for dark meats)
- 1 box refrigerated store-bought pie crust (also you can use frozen pie crusts or homemade if you prefer)
Instructions
- Preheat the oven to 400 degrees.
- Oil spray a casserole dish ( any size that fits the pie dough).
- Place one sheet on the bottom of the casserole dish and cut to fit if necessary.
- Add the vegetables to a large bowl, the meat you're using, gravy, (and wine if using), and gently mix this.
- Pour the mixture into the prepared casserole dish then top with another crust.
- Pierce holes on top with fork times.
- Crimp the edges with the fork all around the pie.
- Oil spray the top with cooking butter spray oil.
- Note: you can brush the top with egg if you like a shiny pie, and add dried herbs and granulated garlic powder on top.
- Bake in a preheated oven of 400 degrees until the top is browned, around 25 minutes, or longer for a crispy crunchy crust.
