Capicola Potato and Broccoli Pie

This is a great brunch pie with deli capicola, hash brown potatoes, broccoli, and lots of cheese baked in a flaky pastry crust.
Ingredients
- 6 slices or more of hot capicola deli meat (or use black forest ham) cut into small pieces
- 1 cup steamed broccoli florets seasoned to taste with granulated garlic, salt, and pepper
- 4 eggs beaten with 1/2 cup milk, (or heavy cream or half and half)
- 3 tablespoons melted butter
- 1 cup cooked crispy hash browns (or use thawed frozen tater tots smashed up)
- 1 store-bought 9-inch deep-dish pie crust or homemade pie crust
- 1 1/2 cups of cheddar blended cheese shredded provolone, cheddar, and mozzarella
- Optional Additions: crispy cooked bacon, sliced peppers, artichoke hearts, mushroom slices, diced eggplant, shredded zucchini or sliced plum tomato, spinach, cooked escarole, crumbled bacon, Italian sausage, steamed chopped asparagus, breakfast sausages crumbled
Instructions
- Preheat oven to 400 degrees, then lower to 350 degrees when ready to bake this.
- In a medium-sized bowl beat the eggs with milk, season light with salt and pepper.
- Spray a pie plate with cooking oil.
- Line the pie plate with pie crust, place the steamed broccoli on the bottom and sprinkle with 1/2 cup blended cheese.
- Add the hash browns on top and capicola or other ham.
- Drizzle the top with melted butter.
- Pour the egg mixture on top.
- Sprinkle the top with the rest of the cheese.
- Bake at 350 preheated oven for 45 minutes to an hour until the top gets nicely browned.
- Let the pie rest for 10 minutes before cutting.
