Summer salads are the best, they can be served warm or cold and still taste great.
I prefer to serve ours at room temperature and always bring the feta cheese to a barbecue outdoor picnic on ice and add it last for safety concerns.

Ingredients For Greek Summer Pasta
- pasta any kind you prefer regular or low carb cooked and drained reserving a little pasta water to keep warm while you cut the vegetables
- homemade greek dressing
- Plum tomatoes cubed or grape tomatoes
- honey
- feta cheese
- Salt, pepper
- Extra Virgin Olive Oil
- Red Wine Vinegar
- Fresh lemon juice
- Fresh mint
- Cloves finely minced garlic
- Salt and black pepper

This is a light and delicious lemony Greek Pasta Salad and perfect for the warm summer days with fresh garden vegetables and Greek dressing.
Ingredients
- Dressing Ingredients:
- 6 tablespoons red wine vinegar
- 4 tablespoons fresh lemon juice
- 2/3 cup extra virgin olive oil
- 1 teaspoon of pure honey
- 2 teaspoons minced fresh garlic or 1 teaspoon granulated garlic powder
- 2 teaspoons dried oregano
- salt and pepper to taste (I use around 3/4 teaspoon of salt and 1/2 teaspoon of pepper)
- Pasta Ingredients:
- 16 ounces of your favorite pasta ( we use low carb, wheat, or gluten-free)
- 1/2 cup halved pitted kalamata olives
- 1/3 cup red onion, diced
- 1/2 cup sliced kalamata olives
- 2 tablespoons chopped fresh mint
- 3 cups seedless cucumber, diced
- 1 cup of halved rosa plum tomatoes or sweet grape tomatoes, cut in halves
- 2 or 3 pepperoncini or another kind of pepper you prefer
- 1/2 cup feta cheese, crumbled
- Garnishes: mint leaves, more feta cheese, wedges of lemon for drizzling
- Optional: sliced grilled chicken breast, grilled lamb sliced,
- Vegetable Options: chickpeas, artichokes heart sliced, hearts of palm sliced, diced yellow beets, sliced radishes, chopped celery, white cooked beans, green cut beans, sliced mushrooms, arugula, or spinach leaves, chopped cauliflower, any kind of olives whole or sliced,
Instructions
- In a large pasta pan filled with salted water cook your favorite pasta to package directions, drain and leave a little pasta water around 1/4 of a cup) in the pan so they don't stick.
- Note: pasta with the additional water will not be drained for this recipe.
- In a bowl whisk together the dressing ingredients and set them aside.
- Diced the cucumber, tomato halves, diced onion, and place them in a large enough bowl with the pasta.
- Drizzle the Greek dressing over this pasta salad mixture and toss to coat evenly.
- Add the feta cheese on top just before serving.
- Note: Sliced grilled chicken breast or grilled lamb can be placed on top of the pasta, add more mint leaves and cheese, and garnish with lemon wedges.
