These Loaded Boiled Smashed Potatoes are one of my favorite ways I serve russet potatoes.

My family devours this chunky potato-style casserole dish with any meal I make.

The topping is fantastic with melted cheddar, sour cream, and crispy crumbled bacon.

However you top your baked potatoes, this can be transformed into however you love them.

Easy Potato Casserole Steps

Loaded Boiled Smashed Potatoes

These smashed potatoes are loaded with cheese, bacon and sour cream that are perfect as a side dish or even used as an appetizer with chips or crackers.

Ingredients:

  • 5 Medium Russet Potatoes with or without skins boiled
  • 1 - 1/2 cups shredded blended cheese or  extra-sharp cheddar
  • 6 slices cooked bacon crumbled
  • salt, pepper to taste
  • 1 cup sour cream
  • 2 tablespoons butter
  • 1/3 cup milk 
  • 1/2 teaspoon granulated garlic powder
  • 1 teaspoon dried parsley
  • Optional garnish: chopped chives 

Instructions:

How to cook Loaded Boiled Smashed Potatoes

  1. In a medium-sized saucepot boil the potatoes for around 35 minutes. ( You can also microwave the potatoes until soft around 8 minutes)
  2. Drain the potatoes and place in a deep pie plate or casserole dish.
  3. Using a fork break up the boiled potatoes into small pieces and smash them lightly into the plate.
  4. Stir in the milk, salt, pepper, garlic, butter, and 1/2 cup cheese.
  5. Mix together evenly.
  6. Pour into an oil sprayed casserole dish or pie plate.
  7. With a spoon, smooth the sour cream over the top of the potatoes.
  8. Sprinkle with the rest of the cheese, crumbled cooked bacon and dried parsley.
  9. Bake in a 400 degree preheated oven for around 10 to 15 minutes or until the cheese is melted.
  10. This is a great side dish with any meal or you can use crackers, tortilla chips as a chunky delicious style appetizer.
