Using some quick-cooking tapioca makes the best thickness in our pie recipe and that's a vintage old secret mom had for making the perfect filling.
We also have tried many other combinations of fruits that actually were a nice change and you can read those suggestions below if you're not a strawberry fan.
I seriously wasn't a fan of rhubarb any other way growing up, now this old-fashioned pie is a family favorite we grew up on because dad had a garden and grew both of these.

If you're in a hurry of course and don't want to make homemade everything from scratch you can use a store-bought pie crust you will need a top and bottom crust.

This recipe is easier than a regular pie especially if you just make a criss-cross lattice crust on top, or just top the pie with the second crust and poke holes on top.

Whole Pies, Lattice Pie, and Slab Pies
A slab pie is made in a rectangular pan and we have also made an extra-large sheet pan for this kind of pie that feeds a large family.
I love the extra drizzle of frosting on top, it gives just a bit of sweetness and either style is great with this recipe but usually, on a regular top and bottom crust, we sprinkle it with sugar and dot with butter and no frosting.
Remember you can use any style of pie plate, sheet pan, or deep-dish it really doesn't matter just as long as you make enough filling and pie crust any pan will be fine.
Rhubarb pie is easy to make and the recipe can be easily doubled for a large family, so I totally recommend making a slab pie instead!
This pie can be made with a top and bottom crust, lattice style fancy woven crust or in a slab pie making a doubled recipe for the filling and crust.

Over the years we have always made everything from scratch but I realize sometimes with a busy schedule our favorite dessert needs a little help saving time.
The combinations you choose can be store-bought or all from scratch but the filling will be the best part so you can't really skip on those ingredients. .
If you want to add a dollop of freshly whipped heavy cream on top or a scoop of your favorite summertime ice cream, that will be a nice addition when serving this Strawberry Rhubarb Pie!.
Grandma's Strawberry Rhubarb Pie Recipe

Grandma's Strawberry Rhubarb Pie Recipe is a delicious pie with sweetness and tartness combined. Grandma always knew how to make the best crust too. You will find both recipes all homemade from scratch along with some other pies we love here.
Ingredients
- 3 1/2 cups rhubarb cleaned, trimmed ends with no leaves, and cut into 1/2 inch pieces
- 2 cups strawberries fresh sliced and stems removed
- 1 cup sugar
- 4 tablespoons quick-cooking tapioca
- pinch of salt
- 1 teaspoon orange zest
- 2 -9 inch pie crusts your favorite pie crust recipe (see ours below) or use 2 - 9 inch doughs frozen or packaged style store-bought
Instructions
- In a medium-sized bowl toss rhubarb, strawberries, sugar salt, and zest in together.
- Let this sit for a few minutes.
- Pour into a bottom crust and then top with another layer of dough or make the lattice top like above in strips with the second dough.
- Optional: Sprinkle the top of the pie crust with granulated sugar and dot with butter.
- Bake in a 400-degree hot oven for 1 hour or until the top is evenly browned.
- Pie Crust Recipe
- 2 cups flour
- 1/2 teaspoon salt
- 2/3 cups shortening
- 4 1/2 tablespoons ice water
- Using a pastry cutter blend the shortening into the flour, salt the then ice water to form a ball. Roll crust as needed above.
