The Kids Love This Casserole
If you love the flavors of Mexico, this will surely end that craving easily and even the kids rave about this.
All the ingredients are so easy to come by and you can adapt this to be hotter by using any kind of authentic hot peppers you like.
You can add more or less of whatever you like.
This is just a basic recipe of how we love our casserole layered.
My family is more on the less spicy side, so we stay away from the habanero and ghost peppers, but you surely can add them as a garnish.
I will give you several suggestions below.
You can always set up a garnish bar with them on it as well!

This is an all in one pan meal with tortilla, beans, rice, corn with a delicious sauce baked with loads of bubbling Mexican blended cheeses.
ingredients:
- 2 tablespoons canola and olive oil blend
- 2 cups diced fresh tomatoes
- 1 onion, minced fine
- 3 cloves minced garlic
- 4 teaspoons chili powder
- 2 teaspoons paprika
- 2 teaspoons ground cumin
- 1 1 1/2 cups boneless, skinless chicken breast cubed or leftover turkey, boneless cooked rotisserie chicken or another meat you prefer
- salt, pepper, and cayenne to taste
- 1 15-ounce can pinto beans, drained and rinsed
- 1 15-ounce can kidney beans, drained and rinsed
- 1 16-ounce jar salsa verde
- 12 small flour tortilla, corn tortilla or use 8 large flour tortilla
- 2 cups cooked rice
- 1- 11-ounce canned corn drained
- 16 ounces of shredded Mexican blended cheese and more for the top if needed
- 1 1/2 cups red enchilada sauce
- Optional Garnishes: sour cream, nacho sauce, jalapeno peppers, salsa, taco sauce, sliced black olives, bell peppers, avocado slices, corn, black beans, crumbled tortilla chips

How to cook Tortilla Tex Mex Casserole
- In a large frypan, add the oil add garlic, onions and saute till it's fragrant but not browned.
- Add chicken cubes, until the juices run clear around 5 to 7 minutes.
- Add 1/2 teaspoon salt, all seasonings, tomatoes, and water until the sauce thickens around 6 to 8 minutes.
- Stir in beans (you can also use black beans or any kinds you prefer) and set aside.
- In a greased square 13 x 9 casserole pan start the layering process starting with pouring half the Verde sauce on the bottom.
- Top with tortilla evenly adds a layer of rice, chicken with bean sauce, corn, half the cheese, and half the enchilada sauce
- Repeat the process with tortilla, etc ending with, cheese on top of the tortilla, the more the better.
- Bake on 350 until cheese is brown and bubbly and tortilla edges look crisp around 20 to 25 minutes.
- Let sit a few minutes before cutting and serving.
- Garnish with sour cream, avocado, black olives, crumbled tortilla chips, and chopped hot peppers, chilies, habanero peppers, bell peppers, and more shredded cheese.
