Two Ingredient Coconut Rice

When we have gone out for dinner I always order a rice bowl this fluffy coconut rice is always on the bottom of the bowl and is one of my favorite versions of rice.

Just two ingredients to make this coconut rice and it's super simple with coconut milk and rice of your choice, boil and serve it the way you like with any meal.

I have used this rice in filling wraps, and tacos, and made my own rice bowls.

The rice is also terrific topped with fruits.

I got hooked on this in my rice bowls and it was always topped with Cajun-style shrimp or Mahi Mahi and so good.

You can just get creative and build your own rice bowls I will give you some suggestions below.

Easiest Coconut Rice Ever



If you still can't figure out how to serve this easy fluffy rice, just thick about using it as a filler for cabbage, inside tortilla wraps and just get creative, it goes with everything!


And again, if you're not a fan of jasmine rice use whatever kind you like even Minute rice!

This is a coconut milk and rice two-ingredient recipe. Terrific as a side dish or in tacos, rice bowls, and great topped with mango, pineapple or papaya

Ingredients

  • 2 cups Jasmine rice or any kind you like.
  • 1 cup (can) unsweetened coconut milk
  • 1 1//2 cup water
  • salt, and pepper to taste
  • 1 tablespoon sugar
  • Optional: drizzle with soy sauce, teriyaki sauce, or duck sauce see suggestions under notes below

Instructions

  1. Rinse and drain the rice.
  2. Place in a saucepan, rice, milk, and water.
  3. Bring to boil and add salt.
  4. Cook for around 15 minutes with a lid with the lowest possible heat until water is reduced then fluff rice with a fork.
  5. Taste before serving add more salt and pepper if you prefer.
  6. Serve with any meal as a side dish or use as a filling for wraps, tacos, in rice bowls with shrimp, or other seafood.
  7. Other additions: add soy sauce or teriyaki sauce to the rice. Top with blackened shrimp or mahi mahi add fruits like mango papaya or pineapple.
