My family thinks I was cooking all day, when stuffing these chicken breasts take no time and the oven does all the work!
The sauce it makes while cooking is delicious and usually enough to even put over a bed of angel hair!

- Chicken breasts boneless thinly sliced
- Garlic cloves minced or use granulated garlic

Italian Stuffed Chicken Breast

This is a delicious chicken breast stuffed Italian style with cream cheese, prosciutto, and wrapped in pancetta or bacon. This recipe can be made with or without meat. The bacon or pancetta will give it lots of flavors. I made it both ways to show you with and without it stuffed with greens and just cream cheese or with the meats and arugula. Either way this is a big hit.
Ingredients:
- 4 Chicken breasts boneless thinly sliced
- 3 Garlic cloves minced or use granulated garlic
- 1/2 cup whipped Cream cheese (herb-flavored, regular or any spreadable cheese you like)
- 4 Pepperoncini peppers or more left whole or chopped
- 2 tablespoons fresh chopped parsley
- salt, pepper to taste
- pinch of red pepper flakes
- 1 cup Arugula or Spinach
- Prosciutto thinly sliced for each piece of chicken or ham
- Italian flavored bread crumbs
- olive oil
- 1/2 cup Pinot Grigio white wine, apple juice or chicken broth
- Optional Garnish: shredded mozzarella 10 minutes before completion of cooking and sprinkle with grated cheese

- wrap outside of the chicken with Italian pancetta or bacon before baking

Instructions:
- Slice the chicken breasts in two thin pieces not cutting all the way through the bottom to form an open pocket like an envelope.
- In a bowl mix 3 finely minced cloves of garlic into cream cheese.
- Add parsley, salt, pepper, red pepper flakes and (or use one of the above stuffing options)
- Open chicken, spread with cream cheese, add meat, and greens if using.
- Roll up and wrap with pancetta or bacon seam side down.
- Place each one with pepperoncini.
- Place each one in a greased pan.
- Drizzle evenly with olive oil and sprinkle with bread crumbs.
- Pour wine or other liquid options, in the pan not touching the chicken.
- I sprinkle with granulated garlic, grated cheese, and shredded mozzarella a 10 minutes before it's done just to melt the cheese.
- Bake on 350 degrees preheated oven until the juices run clear around 35 to 40 minutes.
