Baked Italian Toast With Banana Recipe

This is a perfect brunch or delightful breakfast. The family loves this recipe and it's a great way to get rid of over ripe bananas and lots of milk about to expire!








1 - 13x9 pan I use disposable for easy clean up ( I throw it away, smile)


3 or 4 ripe bananas sliced ( I have also used apples, blueberries and blackberries they all work great!)

cinnamon
light brown sugar

whole milk

3 eggs

butter or margarine

oil spray

9 to 12 slices of Italian bread leaving the crust on it


Spray the pan with oil spray and preheat the oven to 375 degrees.

Sprinkle the bottom of the pan with brown sugar evenly. Sprinkle around 1 tablespoon cinnamon on top of the sugar and blend together. Place mashed bananas on top of the cinnamon sugar mixture.


Drizzle around 2 tablespoons of butter of on the bananas.

In a small bowl beat the eggs with 1 cup of milk. Spread the bread on top of the bananas. Pour the egg mixture on top of the bread. Slowly pour more plain whole milk to cover the bread around another 2 cups till soaked.


Sprinkle the tops of the bread with more brown sugar evenly, cinnamon, and drizzle butter over the top. Bake for 45 minutes or until the top is browned and crispy looking.
