Baked Sheet Pan Parmesan Crusted Chicken Legs

Economically this Healthy Baked Chicken Leg Casserole will stretch your budget the furthest.

These have either skin or no skin that is up to you we take ours off the end results will still be flavorful.

Season the chicken however you like it, we use garlic powder, salt, and pepper and keep it plain and simple with fresh herbs.

The recipe is basic chicken roasted in the oven with whatever vegetables you prefer and we have a great list below to choose from.

Stretching the budget to go further is a necessity with a larger family finding healthier alternatives isn't always easy but this recipe will be foolproof for the pickiest of eaters.

Chicken Leg Casserole Step By Step

  • saute the chicken in a pan on the stovetop with olive oil salt and pepper to taste
  • place in a 13 x 9 baking pan greased or lined with parchment paper
  • add the vegetables of choice
  • oil spray generously the vegetables and chicken
  • top with Parmesan cheese
  • bake at 350 degrees until the thickest part of the chicken reaches 165 degrees using an instant-read thermometer

Tips

  1. for crunchier skins get a good sear on the chicken and saute in olive oil, drain the fat before finishing baking in the oven, or for lower calories bake in the oven then broil for a few minutes
  2. for heat add hot pepper or red pepper flakes to make a spicier casserole
  3. add any fresh vegetables you prefer fresh herbs will enhance the flavor of the vegetables and chicken
  4. add whole garlic cloves and roast in the oven along with baby onions for a robust flavor
  5. chicken is cooked when the internal temperature reaches 165 degrees in the thickest part of the meat
  6. bone-in thighs or breast can be substituted but adjust the cooking time
  7. make the parts of the chicken you prefer, skin on or skinless legs, thighs

Healthy Baked Chicken Leg Casserole

Baked chicken legs with assorted vegetables topped with Parmesan cheese.

Ingredients

  • 8 chicken legs skin on or off (or use thighs, bone-in breast cut in half
  • 2 of each vegetable of choice ( we use zucchini, white potato cubes, sliced plum tomatoes, and bell pepper rings) see notes for more options
  • 1/2 cup of Parmesan cheese grated
  • salt, pepper, and red pepper flakes to taste
  • fresh herbs: fresh basil, thyme, parsley
  • 1 tablespoon minced garlic or granulated garlic powder
  • cooking spray oil
  • olive oil 2 or 3 tablespoons for sauteing the chicken
  • Garnish is optional: wedges of fresh lemon squeezed over the vegetables and chicken and a drizzle of EVOO

Instructions

  1. In a deep chicken fryer pan, add the olive oil and brown the chicken on each side ( around 3 minutes each side) Add the minced garlic for 1 minute before removing from the pan.
  2. Add the chicken to a parchment paper lined 13 x 9 casserole pan (or grease it).
  3. Place the chicken in the pan and randomly place the vegetables in the pan you're using.
  4. Oil spray the chicken and the vegetables, season with salt, and pepper, and sprinkle with cheese.
  5. Bake at 400 degrees for around 45 minutes or until chicken reaches the internal temperature of 165 degrees using an instant-read thermometer.
  6. Serve with fresh herbs on top and wedges of lemon to squeeze over the top if desired.
