I really don't know what took me so long to get creative with this idea, but it was a hit and now it's the most asked-for Italian stromboli I make.
Perfect for holidays, gameday, any family gathering or something to bring along when invited out to a friend's dinner party.

Mom would make her homemade pizza dough and would always come up with brilliant ideas to make something new with the same dough.
We just loved her focaccia, broccoli rabe roll, fried dough, and anything she created was heavenly.

This stromboli is filled with the same meats and cheeses you would find in an Antipasto Salad.
Psst, they will think it's a healthy alternative but we do know better right?

Stromboli, Pizza Rolls, and More
Mom was always adding new ingredients to pizza dough and stuffing them.
Basically whatever she had on the antipasto tray was in this kind of stuffed pizza dough.
Through the years the rolls were adapted with many different ingredients to what everyone else liked in them.
I loved herpizza dough and the versatile creative meals she came up with.
The list of different additions were endless using different vegetables, meats and cheese, so get creative and tailor your antipasto rolls to whatever you love on your trays in this stuffed roll.
Additions and Suggestions
- boiled escarole
- sauteed broccoli rabe
- raw spinach leaves
- artichoke hearts
- chopped onions,celery,hot peppers, pepperonicini
- loose cooked sausage
- pepperoni
- salami
- shredded provolone,mozzarella or another cheese you prefer
- procuitto
- mortadella
- diced tomato
- capicola
- hard boiled eggs
- anchovies
- sliced olives of any kind
- tuna in oil drained
Tips
- Always raise the dough for at least 1 hour after filling
- Bake in a preheated oven
- Brushing with egg yolks makes a nice sheen on top
- Always put seam side down so it doesn't burst
- Never use frozen bread dough (it usually has milk in the recipe and is not good for this recipe) always fresh Italian dough
- Before baking top the dough with fresh herbs, garlic,drizzled with olive oil, and sometimes black pepper and sesame seeds for a nice change in taste

- Hot capicola
- Sliced plum tomato
- Boiled Escarole drained and blotted dry or use, arugula, sauteed spinach or other greens you prefer cooked
- Thinly sliced peppers any kinds you like
- Provolone sharp slices
- Shredded mozzarella
- Genoa Salami'
- Mortadella
- Tuna
- Optional: sliced black or green olives, prosciutto, chopped artichoke hearts, spinach, oil canned tuna in place of meat, any kind of cheeses, sliced eggplant, zucchini shredded
Pizza Dough
You can make Mom's homemade dough recipe or buy store-bought.
Note Pizza Dough! As I said in the tips, the frozen bread doughs you find in the supermarket stay soft and will rip and break it isn't sturdy enough to use for this recipe. They're more like sweet American bread dough. The rolls would be wet, soggy you will need to buy only Italian pizza dough to nake this kind of antipasto roll

Stuffed Pizza Roll Dough
If you love antipasto and sandwiches, this roll is everything you will ever need and it's always a big hit at any party.
Everyone raves about how easy this is instead of having trys of everything it's an all in one appetizer on the table or a great weeknight meal in the summer with a pasta salad on the side.
I have to say, it's a chore to get them to eat vegetables here in my home, especially my husband, but hidden, it's golden!

Antipasto Roll

This is a rolled pizza dough that is filled with Antipasto filling which is an Italian salad. There is greens, meat, cheese all in a soft homemade pizza dough with a crispy outside crust baked all into one sandwich.
Ingredients
- When Making the roll, I chop the meat using 2 cups of assorted and around 1 cup of shredded cheese. Additions you add are placed on top just around 1 tablespoon of each until the dough is filled. Always squeeze out any water from your vegetables you used IE escarole boiled. Spinach can be used raw but rinsed.
- Here are the filling suggestions:
- Hot capicola
- Sliced plum tomato
- Boiled Escarole drained and blotted dry or use, arugula, raw or sauteed spinach or other greens you prefer cooked
- Thinly sliced peppers
- Provolone sharp slices
- Shredded mozzarella or any blended cheese
- Grated Cheese Pecorino Romano
- Genoa Salami'
- Any kinds of sweet or hot peppers
- Olive Oil
- Minced Garlic
- Dried Oregano, basil, parsley, black pepper
- Optional: sliced black or green olives, mortadella, prosciutto, chopped artichoke hearts, spinach, oil canned tuna in place of meat, any kind of cheeses, sliced eggplant, zucchini shredded, anchovies, boiled egg chopped
Instructions
- Roll out 1 pound of dough 1/2 inch thick.
- Use around 2 cups of assorted chopped ingredients.
- Add a little or a lot of everything you like in the middle of the dough adding the shredded cheese, grated cheese, and any spice you like on top.
- Roll the dough up like a jelly roll.
- Place seam down on an oiled cookie sheet or parchment paper, drizzle the top with olive oil sprinkle with grated cheese, and minced or granulated garlic.
- Optional: I also sprinkle the top with granulated garlic, dried oregano, fresh rosemary, chopped basil parsley, and pepper, sometimes sesame seeds drizzled with olive oil.
- Bake in a 400-degree hot oven for 40 minutes or until browned on top.
