Slow Cooker Chicken Cacciatore Recipe

If you love Chicken Cacciatore then this slow cooker recipe is going to just blow you away in flavor!


The slow cooker seals in the juices and smells divine while cooking, your mouth will be watering with the fabulous aroma from the peppers and tomatoes cooking.


Besides this dish is extremely easy to make, "by setting and forgetting it when cooked in the slow cooker", it's also absolutely fork-tender delicious!

Grandma's Chicken Cacciatore



Grandma always used fresh ingredients.


There was no skimping on fresh tomatoes, fresh garlic or fresh green peppers.


Hers was a simplified dish and nothing else was in there for here cacciatore.


Later on, mom would add to the pot like a cacciatore stew with mushrooms, carrots and even some potatoes at times.


This is a basic recipe and you can improvise to however you like it.

Tomato and Wine Sauce



The sauce is wonderful and Grandma always added wine to the pan!


She used whatever we had on hand white or red,  but I prefer to use white so it doesn't make the chicken look pink inside when it's done cooking.


I have made this recipe on the stovetop, regular slow cooker, in the oven and now even the Crockpot Express.


Using a small appliance that's a multicooker that sears the meats, makes this dish so much faster and tastier to serve.


One step in the slow cooker that's different is you will have to sear on the stovetop first before adding to your slow cooker.


No matter which way you decide to cook this Chicken Cacciatore, it's tender flavorful and the perfect meal to come home to after a long day at work or even shopping!




Suggestions



  • Use any parts of the chicken bone-in or boneless
  • Substitute hot peppers or cherry peppers
  • Add fresh sliced mushrooms around 1 pound
  • Always slow cook this recipe no matter what cooking method is used

Ingredients You Will Need to Make Slow Cooker Chicken Cacciatore

  • chicken pieces bone-in or boneless breast and thighs if using to pour over rice or mashed potatoes ( I used legs and thighs bone-in for this recipe today)
  • seasoned flour salt, pepper.
  • bell peppers sliced
  • plum tomatoes pulsed to a diced size
  • minced garlic
  • can whole tomatoes with basil added pureed in the food processor
  • olive oil
  • white wine ( I used Pinot Grigio)
  • cayenne pepper or red pepper flakes, oregano, parsley
  • Optional: peas, cut green beans, finger carrots for sweetness




Stovetop Chicken Cacciatore



The flavors are amazing.


The chicken always falls off the bone, it really gets very tender using a slow cooker.


Grandma had no slow cookers in the 1960s, she only and always made this on the stovetop as shown in the photo below.


You can proceed by cooking this on the top of the stove fon a slow simmer around 2 hours or until the chicken is fork-tender.

Tips


  • Always fry the chicken pieces first, ( you can even do that the night before if you work out of the home for the next day's dinner)
  • If adding other vegetables to the pot always add them on the bottom and chicken on top for more flavor
  • For easier cleanup, use liner slow cooker bags
  • Use at least a 5-quart crockpot/slow cooker for this recipe
  • Use boneless thighs or breasts if pouring over rice or mashed potatoes
  • For a very thick sauce add flour 1/2 hour before serving around 1 tablespoon
  • Only use a good grade wine that tastes good when drinking

Here is the classic Italian chicken cacciatore made simple in a slow cooker. The recipe is fantastic, tasty and great with rice, potatoes or even all by itself with some hard crusted Italian bread.

ingredients:

  • 8 to 10 chicken pieces bone-in (or boneless breast and thighs if using to pour over rice or mashed potatoes) 
  • Note: ( I used legs and thighs bone-in for this recipe today)
  • Shake the chicken in around 1 cup of seasoned flour before frying seasoned with salt, pepper.
  • 3 bell peppers sliced
  • 8 plum tomatoes pulsed to a diced size
  • 3 cloves minced garlic
  • 1 can 16 ounce whole tomatoes with basil added pureed in the food processor
  • olive oil
  • 1/2 cup white wine ( I used Pinot Grigio) or more if it gets too thick
  • salt, pepper, cayenne pepper or red pepper flakes, oregano, parsley
  • Optional: I occasionally throw in a can of peas of cut green beans, mushrooms, for an additional vegetable at the end of cooking. 
  • Also, I add a handful of finger carrots for sweetness and cubed potatoes as a stew.

How to cook Slow Cooker Chicken Cacciatore

  1. Fry the floured chicken pieces until nicely browned on both sides and season to taste with salt and pepper. You can do this the night before this meal to save time in the morning before going on with your day.
  2. In a large enough slow crocker to accommodate the chicken pieces, add the tomatoes, wine,  peppers, herbs and spices and garlic to the slow cooker.
  3. If adding other vegetables like peas do not add until the end of the cooking process. 
  4. Add them around a 1/2 hour before this is cooked and also for thicker sauce add more flour and water 30 minutes before it completed time.
  5. Slow cook this for 6 to 8 hours. Serve with crusty Italian bread rice or mashed potatoes.
  6. Note: I used a 5 or 7 quart-sized slow cooker.
