Broccoli and Cheddar
We had always loved our baked potatoes topped with broccoli and cheddar.
Another family favorite is broccoli cheddar casserole and we made that often around the Thanksgiving holiday so our family loves that combination of flavors.
Those two combinations really go famously together and we love the flavors but hey, again as I mentioned before, just change it to whatever your family prefers.
The vegetables are steamed first so there is hardly any cooking top in comparison and this dish can be on the table within 30 to 40 minutes depending on how thick the chicken breast is.
One of our favorite alternatives show below is a caprese chicken topped with tomatoes and spinach using provolone or mozzarella cheese, don't forget to check the suggestions below.
Tips:
- Add more or fewer herbs and spices to taste
- For easy cleanup bake on parchment paper or oil sprayed foil
- Always check the chicken for doneness when the juices run clear it's cooked
- If it starts to dry out using wine add water or a little chicken broth until completed cooking check at 20 minutes

- sliced tomatoes (caprese style chicken with tomato and mozzarella or provolone on top omit the mayonnaise) you can also add sauteed spinach or escarole for a change shown below
- asparagus same as the broccoli recipe
- cauliflower same as the broccoli recipe
- spinach same as the broccoli recipe
- escarole sauteed in garlic and oil and use mozzarella omit the mayonnaise
- eggplant slices use the sliced tomato method above
- zucchini slices use the sliced tomato method above

Broccoli and Cheddar Baked Chicken

Chicken with cheddar cheese and broccoli florets on top baked in the oven with Italian flavored bread crumbs. This is quick and easy with just a few ingredients all in one pan meal. If you love chicken stuffed with broccoli and cheese here is a tasty easy alternative.
Ingredients:
- 6 pieces thin-sliced boneless chicken breasts ( I usually get that many pieces out of two whole boneless breasts or you can buy them thinly sliced.)
- 2 cups steamed broccoli
- 6 slices of extra sharp cheddar cheese
- 3 tablespoon mayonnaise
- 1/2 teaspoon granulated garlic powder
- salt, pepper to taste
- 3 or 4 tablespoons grated Parmesan cheese
- 1/2 or more of Italian Flavored bread crumbs
- Optional: cayenne pepper to taste for heat
- Olive oil and butter for drizzling on top around 3 tablespoons of each.
- 1/2 cup chicken broth or white wine
- Casserole dish at least 3 inches deep
- Parchment paper
- Broccoli alternatives: sliced tomatoes, asparagus, cauliflower, spinach, escarole, eggplant slices, zucchini slices
Instructions:
- In a deep casserole pan of at least a 3-inch deep pan, place parchment paper to fit on the pan using.
- In a medium-sized bowl, add the steam broccoli, mayonnaise, granulated garlic powder, salt, pepper to taste, and mix together.
- Note: if you like spicy foods you can add a little cayenne pepper to the broccoli.
- Lay the chicken breasts on the bottom of the pan to fit evenly.
- Place a spoonful on top of each piece of chicken breasts, add the cheese slice on top then sprinkle with bread crumbs and Parmesan cheese evenly.
- Pour the melted butter over each piece with olive oil.
- Carefully pour the broth or wine around the bottom edges of the chicken not touching the tops.
- Bake at 400 degrees for around 35 minutes or until everything looks browned and chicken is cooked.
- Serve with twice-baked potatoes or baked potato wedges.
