I sometimes use refried beans and cheddar for a filling, it's the perfect way to repurpose any meat leftovers for also!
Super Easy Chicken Quesadilla

This is a filled flour tortilla with chicken and cheese super fast and easy as an appetizer or quick lunch.
Ingredients
- 1 chicken breast cut into small bite-size pieces
- 1 tablespoon taco seasoning mix
- 1/4 cup diced bell pepper
- 3 cloves minced garlic or 1 small onion (use both if you like)
- 8 tablespoons taco sauce or chili sauce
- 4 large flour tortillas
- 2 cups shredded Monterey jack cheese Sharp cheddar or Mexican blend
- extra virgin olive oil for stir-frying the chicken
Instructions
- In a large frying pan heat 1 tablespoon or more of oil on medium heat.
- Place the cubed chicken in the pan with taco seasoning, and saute until the juices run clear 5 to 6 minutes.
- Heat 1 tablespoon of oil in a large frying pan over medium-high heat.
- Add in the pepper, garlic, and onion if using.
- Just stir fry this for like 3 minutes stirring constantly.
- Stir in the bell pepper and continue to cook for a couple of minutes, or just until it softens.
- Remove from heat.
- Stir in the taco sauce.
- Add some of the mixtures to the tortilla and add the shredded cheese.
- Fry the tortilla on medium heat in olive oil or butter in a clean large pan flipping on both sides until cheese is melted inside and the outside is crispy.
- This takes around 3 minutes on each side lower the heat if too high and starts to burn the tortilla.
