These Italian Covered Turkey Sandwiches are perfect around any Holiday like Thanksgiving for instance when you have lots of leftover turkey after the big holiday meal.

Easy to prepare using all leftover gravy and side dishes, this become the best semi-homemade meal ever.

After working in retail for over 30 years, I learned to be thankful for a quick hot meal and had to cut corners sometimes for a quick meal.

These suggestions below on how to have a delicious holiday meal without little fuss in no time really satisfied both my husband and me for many years.

If you're also not fond of cooking just use sliced deli turkey in place of the leftover Thanksgiving turkey and jarred gravy in a pinch.

We love our leftover turkey when we end up celebrating a different day to make turkey pot pies, hot pockets, and these delicious covered turkey sandwiches.

This is a covered Turkey sandwich made with all store-bought ingredients for folks who have to work on Thanksgiving Day or are celebrating alone. This is a quick and easy feast.

ingredients:

  • 1 pound (around 2 cups) of shredded roasted turkey or use thick-sliced oven-roasted deli turkey
  • Note: you can also substitute rotisserie chicken)
  • 2 jars of turkey gravy
  • 3 tablespoons white wine (any good drinking wine)
  • 2 cups frozen corn
  • 1 small can of sweet potatoes drained
  • 1 pound store-bought garlic mashed potatoes
  • 1 whole loaf of Italian bread thickly sliced
  • Other quick food suggestions: boxed stuffing, canned cranberries
  • Side dishes that are optional: sweet potatoes topped with marshmallows, butter, cinnamon, brown sugar, sliced tomatoes, garden salad, corn casserole, steamed broccoli

instructions:

How to cook Italian Turkey Covered Sandwich

  1. Place the turkey sliced in an ovenproof 2-quart dish. Pour both jars of the gravy over it adding the white wine ( I used Pinot Grigio).
  2. Add some butter to the corn in another ovenproof dish. Heat in the microwave or oven.
  3. In a medium-sized ovenproof dish, add the sweet potatoes and mash with a fork. Add 1 tablespoon each brown sugar, butter, and a pinch of cinnamon and stir together. Add some marshmallows to cover the top. Bake the sweet potatoes until warm and the top of the marshmallows are browned.
  4. Heat the store-bought potatoes in the microwave until hot or make your own.
  5. Place one thick slice of bread on the plate.
  6. Top with turkey and some gravy poured on top of the bread. Add another thick slice of bread on top, and add more gravy.
  7. Place the potatoes on the plate next to the sandwich, making a well in the center, and add gravy to the center well.
  8. Of course, you can make some stuffing from a store-bought package to add to the festive plate.
