Mom's Homemade Italian Sausage
Mom made all kinds of sausage flavors, herb, sweet, hot, garlic and many times her recipe was a new creation every time she cooked.
I put together a few ways to try this recipe using her basic recipe with some additions to make the sausage how you like it.
We love hot and spicy but sweet is easy, you just leave out the cayenne pepper!
This is a super simple recipe and you're going to wonder what took you so long to make your own sausage it's so much better than store-bought!
This is without the casing, quick and easy using simple pantry ingredients.
Ingredients You Will Need to Make Mom's Homemade Italian Sausage Skewers
- ground pork (I usually use a pork butt ground)
- fennel seed
- paprika
- minced garlic
- olive oil
- salt and pepper
- white wine
- grated cheese
- dried parsley
Tips
- Use ground pork butt, this has a better blend of fat
- Use fresh herbs when possible especially for herb flavored
- Any shapes can be made or even sausage patties for sandwiches
- These are great in Traditional Sunday homemade tomato sauce
- Always fry on aluminum foil if using an Air Fryer
- Grill on aluminum sprayed foil or pans
- Always soak the wooden skewers in water first if using on the grill or oven-baked
- Skewers are threaded for air fryer method, pan-fried after they are cooked just for presentation.
- Use a toothpick if you don't have skewers
- Other vegetables can be threaded onto the skewers after these are cooked or added in the oven while baking IE mushrooms, peppers, small cocktail onions etc.
Cooking Sausage Skewers Methods:
- Air fried on sprayed foil for 14 minutes
- Pan-fried in a small amount of oil until browned
- Oven-baked for around 30 minutes on a parchment-lined baking pan
- Grill on aluminum foil oil sprayed for around 20 to 25 minutes

This is a homemade Italian sausage recipe made with ground pork and on skewers for parties, appetizers or a fun backyard picnic. Easy to make and there are many cooking methods you can use for a delicious quick homemade sausage.
Ingredients:
- 2 pounds of ground pork (I usually use a pork butt ground)
- 1 tablespoon fennel seed
- 2 tablespoons paprika
- 2 teaspoons minced garlic
- 1 tablespoon olive oil
- 1 teaspoon or more of salt and pepper
- 2 tablespoons white wine
- 3 tablespoons grated cheese
- 1 tablespoon dried parsley
- For hot sausage add 1/2 teaspoon of ground cayenne pepper per pound leave out if you want sweet sausage.
- For herb-flavored sausage add 1 tablespoon of dried Italian seasoning or 1 tablespoon chopped fresh basil and 1 tablespoon chopped fresh Italian parsley
- Additional items you may need:
- Cooking spray
- oil
- aluminum foil
- Wooden Skewers or use toothpicks for appetizers after these are cooked not matter which way you cook them: For Skewers: soak wooden skewers in water for around 1 hour before using or overnight for oven and grilling methods.
- Baking, sheet, frying pan.
Instructions:
How to cook Mom's Homemade Italian Sausage Skewers
- Mix the ground pork in a bowl with all ingredients shaping into football/ egg shapes.
- Place on parchment paper or greased pan spearing each one with a wooden skewer in the middle of each the shaped sausage.
- Bake on 400 degrees hot oven until browned for around 30 minutes or until browned and starts to look crispy.
- Grill: outside on oil sprayed aluminum foil pans for around 25 minutes. Note use skewers soaked in water first, thread then grill).
- Air fry: line the basket with aluminum foil, oil spray lightly and air fry on 350 for 14 minutes, cool a few minutes then thread to skewers.
- Pan-fry: add some vegetable or canola oil to a pan, fry until browned on both sides, then thread to skewers.
