Here is the quickest version of an Italian Style Chocolate Cannoli Cake you will ever find! It's filled with cannoli cream but starts out with a simple package of chocolate cake mix!

Chocolate cake baked with a layer of ricotta cannoli filling on top then piled high with a tantalizing creamy whipping pudding frosting.

This recipe comes together quickly and can be made in any kind of pan, we use two separate pans and freeze one or for big social gatherings one big sheet cake.

Any brand of cake mix can be used to package instructions and even can be changed out for another flavor you may prefer.

Doctored cake mixes are fun, and fast, and usually shock most tasters that it's not all made from scratch.

Simple Step By Step

  1. preheat the oven to 350 degrees and grease either two round, square pans or one 13 x 9 sheet cake pan and set it aside
  2. mix the cake to the package instructions
  3. stir together the ricotta filling ingredients
  4. pour the batter into the cake pan, top with ricotta filling
  5. bake and cool
  6. top with the frosting recipe below (refer to the bottom for the complete recipe)
  7. keep refrigerated

  • pistachios
  • instant pudding
  • vanilla

Other Options

  1. add chopped maraschino cherries to the batter in green and red for Christmas
  2. crush some sugar cones on top of the whipped cream frosting dipped in sweet Marsala wine
  3. use instant chocolate pudding instead of vanilla
  4. add toasted almonds instead of pistachios
  5. decorate the top with whole strawberries
  6. this can be baked in two 9-inch pans, 1- 13x 9 pan, character or other fancy pans with the same instructions and method

This is a doctored cake mix to make an Italian Chocolate Cannoli Cake.

Ingredients

  • Filling:
  • 1 - 15 ounce container Whole Milk Ricotta Cheese
  • 4 eggs
  • 1 teaspoon pure vanilla
  • 1/4 cup of sugar
  • 3 tablespoons mini chocolate chips
  • 1/4 teaspoon cinnamon
  • In a bowl mix together.
  • Note: you can sprinkle more chocolate chips on top of the filling before baking if desired also.
  • 1 chocolate cake mix of any kind
  • Frosting:
  • 1 cup whole milk
  • 1 package of instant pudding
  • 8 ounces of real whipped cream or non-dairy topping or use 2 cups of sweetened real whipped cream
  • Garnish: Chopped Pistachio nuts

Instructions

  1. In a large mixing bowl using an electric mixer make the chocolate cake mix according to the package directions.
  2. Pour into a 13x9 deep cake pan greased.
  3. Mix the filling together.
  4. Pour the filling layer over the top and smooth out with a spoon or knife to the edges.
  5. Sprinkle with the mini chips evenly use more if you like.
  6. Bake at 350 until set in the middle around 40 minutes.
  7. Set the cake aside to cool completely. In the meantime make the frosting
  8. Frosting:
  9. Whisk the milk and pudding together in a medium-sized bowl until it thickens.
  10. Fold in the whipped cream.
  11. Spread over the top of the cooled cake.
  12. Sprinkle with pistachios.
  13. Keep Refrigerated.
