Chocolate Cookie Ice Cream Sandwiches

These ice cream sandwiches bring me right back to my childhood thinking of my favorite summer sweet treat.

Using soft chocolate cookies and your favorite ice cream sandwiched together becomes a frozen layer of nostalgic perfection.

Of course, you can just buy your favorite cookies with ice cream and sandwich them together instead of making your own, but to get the true taste and experience, try making this cookie batter at least once.

There is nothing better than ending that backyard barbecue than having a tray of homemade ice cream sandwiches to end that perfect day.

Use whatever flavored ice cream you like inside your chocolate cookies, we prefer pistachio or chocolate then roll the sides in sprinkles or some other suggestions we have for you below.

Cookie and Cream



We have tried many combinations of cookie recipes, peanut butter, sugar cookies, chocolate chip, and brownies just to name a few, so if you are not a baker, don't miss trying those with favorite ice cream inside of two cookies!

This recipe is super easy to follow and yes a little time consuming, but the experience of homemade ice cream sandwiches is a memory not soon forgotten

Ingredients to make Chocolate Cookies for the Ice Cream sandwiches(scroll to the recipe card for exact measurements below)

  • ice cream
  • cake flour or sifted all-purpose flour 
  • unsweetened cocoa powder
  • salt
  • light brown sugar
  • unsalted butter 
  • egg yolks
  • vanilla extract



Tips

  1. mix in the dry ingredients and just gently fold in
  2. do not overbake the cookies 
  3. spread the softened ice cream around 1/2 thick on the cookie sheet and refreeze until firm
  4. use a cookie cutter to cut round ice cream sandwiches
  5. freeze the sandwiches until firm then wrap and place in a container
  6. these ice cream sandwiches can be frozen up to 3 months
  7. decorate the sides with holiday-themed colorful sprinkles for the 4th of July, Labor Day, Memorial Day, or green for St, Patrick's Day ( or other colors iE pastels for  Easter, etc.)
  8. use store-bought cookies and your favorite ice cream for a quick ice cream sandwich instead of homemade ice cream sandwiches
  9. use leftover breakfast waffles or pizzelles for the sandwiches
  10. cut them the dough in 2 - 1/2 x 1 - 1/2 sizes for mini sandwiches

Ice Cream Suggestions



Chocolate cookies go great with chocolate ice cream, vanilla, 3 flavored ice creams, chocolate chip, mint, cherry, raspberry, pistachio, or cannoli ice cream (pick your favorite!).

One combination we love is making brownies into a larger cookie sheet, cut them after cooled and sandwich them with a fudge swirl ice cream.

Suggestions can be endless, pick a cookie, and ice cream, and viola instant ice cream sandwiches.

Again, these nostalgic frozen treats will make more memories for years to come for whomever you're making them for.

There is an actual National Ice Cream Sandwich day every year on August 2nd!

Chocolate Cookie Ice Cream Sandwiches

A childhood favorite sandwich cookie filled with ice cream in the middle. The perfect frozen confection and the best of both worlds. Homemade and delicious!

Ingredients

  • 1/2 gallon ice cream, softened enough to spread
  • 2 2/3 cups cake flour (or use sifted all-purpose flour)
  • 2/3 cup plus 1/4 cup unsweetened cocoa powder 
  • 3/4 teaspoon salt
  •  1 cup light brown sugar 
  • 20 tablespoons unsalted butter softened
  • 2 egg yolks 
  • 2 teaspoons vanilla extract
  • Note: For a quick version: use store-bought cookies of your choice, add softened ice cream and top with another cookie then freeze on parchment paper until firm. You can also do this with chocolate graham crackers or regular.

Instructions

  1. In a 13 x9 baking pan line this with parchment paper, smooth the ice cream into the pan, and freeze it.
  2. Preheat the oven to 350 degrees and line two brownie-sized 12 x 9 baking sheets with parchment paper and set aside.
  3. Cream the sugar and butter together for around 3 minutes. 
  4. Add the softened butter and egg yolks until evenly blended.
  5. Stir in the cocoa and flour with vanilla and salt just until all the white is gone.
  6. Divide dough into 2 pieces and pat each piece into a 5-inch square, wrap with plastic wrap, and chill until firm, about 25 to 30 minutes.
  7. Roll each into a 12 x 9-inch rectangular shaped dough and cut out 6 - 4 - inch sized rectangular pieces ( or rounds or whatever shape you like however you will have to cut the ice cream to fit that shape you choose)
  8. Place on parchment-lined cookie sheets and using wooden skewers or fork poke holes ( around 12) on the tops before baking.
  9. Bake at 350 degrees until cookies are firm (not overly browned) between 10 and 12 minutes.
  10. Cool completely.
  11. Sandwich together with your favorite ice cream.
  12. Place them on the parchment paper and refreeze them until solid.
  13. Wrap them individually with foil or parchment paper and place them in a freezer container.
  14. Freeze for up to 3 months.
  15. Note for mini sandwiches: cut the dough 2 1/2 by 1 1 /2 inches rectangles

Notes:

Note: for fast ice cream sandwiches, use any store-bought LARGE cookies and sandwich them with your favorite ice cream
