Buffalo Chicken Meatball Bites

For those of us that love those classic buffalo wings on game day, but sometimes the price of ordering out doesn't quite fit in this month's budget we created a mini meatballs ground chicken buffalo bite to satisfy that craving!

These chicken bites have the same buffalo flavors we all know and love and are super easy to make.

Ground chicken is formed into meatballs with breadcrumbs and plenty of seasoning, backed with hot sauce, and for an optional little crunch inside we added some chopped celery.

Baked, Fried, or Air Fried, we have you covered in less than 30 minutes you'll have these delicious buffalo chicken meatballs appetizers on your tables just in time for your favorite game, family gathering, or just because you're a huge buffalo wing fan!

Our recipe is easy for these meatball bites and they also are economical in comparison to actual chicken wings plus they are easier to eat.

Chicken Mini Meatballs Appetizer Bites Step by Step:

  1. pick a cooking method below and follow the cooking instructions
  2. make the dipping sauce preferred (we make blue cheese) and refrigerate it for later
  3. mix the meatballs mixture and roll into balls around 35
  4. bake, fry, or air fry until the internal temperature using an instant-read thermometer is at 165 degrees
  5. cool a few minutes after cooking before eating these will be hot!
  6. serve with your condiment, dipping sauce, or salad dressings

Ingredients You Will Need (scroll down for exact measurements

  • vegetable or canola oil
  • butter
  • wing sauce/ hot sauce
  • ground chicken
  • egg
  • granulated garlic powder
  • plain breadcrumbs
  • salt, and pepper to taste
  • minced celery chopped is optional

Optional Serving Ideas:

  1. Vegetable Platters: add vegetable sticks with the meatballs using carrots, celery, sliced cucumbers, olives,
  2. Premade Dips: serve with refrigerated premade dips (onion dip, ranch dip, blue cheese dip)
  3. Shrimp or Chopped Imitation Crab meat:  substitute seafood for ground chicken and use the same binding ingredients, however, use just the baking or air frying methods for cooking
  4. Ground Beef, Pork, or Turkey:  substitute another ground meat with the same binding ingredients
  5. Shredded Rotisserie Chicken: use the same binding ingredients (these will take less time) place the meat in the food processor and pulse until shredded add one extra egg and increase the bread crumbs to 1/4 cup.
  6. Bacon and Cheese: melt the cheese you prefer(we use swiss, provolone, Havarti, or mozzarella) with crumbled cooked bacon on top of the meatballs
  7. Olives and Peppers: serve with sliced black olives, roasted or hot peppers chopped peppers on top of the meatballs

Alternate Cooking Methods:

  1. Baking: preheat the oven to 400 degrees place on a parchment-lined baking pan and bake for around 20 to 25 minutes
  2. Air Fried:  preheat the air fryer to 400 degrees. Spray the basket and air fry for 11 to 15 minutes until golden brown.

These are chicken meatball appetizers with a blue cheese dipping sauce with 3 different cooking methods.

Ingredients

  • Chicken Meatballs:
  • 2 tablespoons vegetable or canola oil
  • 4 tablespoons butter
  • 1/3 cup wing sauce/ hot sauce
  • 1 pound ground chicken
  • 1 egg
  • 1 teaspoon granulated garlic powder
  • 3/4 cup plain breadcrumbs
  • salt, and pepper to taste
  • 1/3 cup minced celery chopped is optional
  • Dipping Sauce:
  • 3/4 cup sour cream
  • 1/3 cup blue cheese crumbles
  • 1/3 cup whole milk or half and half
  • 3 tablespoons Hellmann mayonnaise
  • 1 teaspoon granulated garlic powder
  • salt and pepper to taste
  • dash of cayenne pepper or a dash of hot sauce
  • 1 tablespoon white vinegar
  • Note: you can also just use a refrigerated brand of blue cheese salad dressing or ranch dressing.

Instructions

  1. Make the dipping sauce by mixing all the listed ingredients in a bowl then refrigerate covered until ready to use.
  2. Mix all the meatball mixture together, and roll them into small mini meatballs.
  3. Note for all Cooking Methods: Meatballs should read 165 degrees on an instant-read thermometer to be sure they are completely cooked.
  4. Fry: Heat 2 inches of oil and fry in a heavy-duty cast iron pan. Fry until slightly browned on both sides around 4 minutes on the side on medium-high heat.
  5. Baked: Line a baking sheet with parchment and preheat the oven to 400 degrees. Baked until golden browned around 20 to 25 minutes.
  6. Air fry: Preheat the air fryer and oil spray the basket. Air fryer for 11 minutes or until golden and the internal temperature of meatballs is at 165 degrees.
