Cake Mix Eggnog Cake

Making this semi-homemade Eggnog cake is so easy using a doctored cake mix!

The cake is moist and delicious and totally a great way to use up any leftover homemade eggnog from the holidays.

Really just the title of Eggnog Cake shouts Holiday and is perfect for bringing to a party or to serving some last-minute unexpected guests during the busy Christmas season.

If you're a busy homemaker who works from home, busy with kids, has a job outside the home, or maybe just not fond of baking, this recipe is the perfect delicious holiday cake.

Even if you don't decorate it, this cake tastes marvelous just dusted with powdered sugar!

I love it topped with whipped cream and sliced bananas with caramel topping or a homemade buttercream rum frosting with eggnog in it!

This eggnog cake tastes great plain or frosted and just shouts Holiday!

It doesn't matter how you serve this cake whether it's sprinkled with powdered sugar, all dressed to the nines for the holiday, or with a dollop of whipped cream, it's the perfect blend of flavors.

I don't know about you, but my eggnog doesn't last long, so I have to make this cake as soon as I make my dad's homemade eggnog.


I haven't had store-bought in years but use whatever you want to make life simpler!


This cake is moist, full of eggnog flavors, and perfect for a potluck, holiday gatherings with family or just because it's so delicious you will want a slice with your morning coffee!

Easy Eggnog Cake Using A Cake Mix

The perfect holiday cake for a busy homemaker, working individual or hates to bake!This eggnog cake is semi-homemade starting with a mix and decorated for the holiday parties during the season! Perfect and festive but delicious all year long! Take a look at the link for homemade eggnog!

Ingredients

  • 1 standard-size box of spice cake mix or yellow cake mix a
  • 1 small box of instant vanilla pudding mix
  • 1 cup of eggnog
  • 4 eggs
  • 1/3 cup vegetable oil
  • 1 teaspoon cinnamon and nutmeg combined for a little of both
  • 1/4 cup water
  • 1 teaspoon rum or pure vanilla extract
  • Frosting:
  • 3 cups powdered sugar
  • 3 or 4 tablespoons eggnog
  • 1 teaspoon vanilla dark rum
  • 1/4 teaspoon cinnamon
  • pinch of nutmeg
  • 1/2 cup (1stick) softened butter

Instructions

  1. Grease and flour a bundt pan or a 13x9 sheet cake pan. Preheat the oven to 350 degrees.
  2. In a large bowl add all the ingredients.
  3. Beat using an electric mix until well combined around 2 1/2 minutes.
  4. Pour into prepared pan and bake until center springs back around 40 minutes.
  5. Test with a toothpick.
  6. Cool and frost with Eggnog frosting or sprinkle with powdered sugar.
  7. Egnnog Frosting:
  8. Whip together the butter, cinnamon, and sugar( adding gradually).
  9. Add a few tablespoons of eggnog, rum, or brandy until desired consistency.
