Air Fried or Oven Roasted Fan Potatoes are also often referred to as hassle-back potatoes and an elegantly fun way to serve your spuds!


Slices of cooked russet potatoes can be made in several different cooking methods we just happened to love ours with Parmesan and Italian breadcrumbs on top.


Perfect for a side dish, or great in a hobo dinner packet plus these can be served plain or topped with my many suggestions below.


We really loved them air fried with less fat involved but baked, boiled, or microwaved they are all delicious so you get to choose below those suggestive methods of cooking.

Quick and Easy Side Dish or Meal



One of my very favorite ways to make potatoes to impress everyone are these fanned potatoes, they're delicious, and depending on which cooking method you choose can be done in 10 minutes!


Microwaved of course is the easiest and still soft, Air Fried are crispy and taste like home fries, boiled are around 35 minutes then baked for around 1 hour with crispy skins on top, so you choose.


I have several suggestions for toppings to make them a whole meal or the perfect side dish for any dinner party or family meal.


With just a few ingredients and if you're a potato lover, you're going to love this recipe and make it often like we do.

Simple Ingredients You Will Need

  • russet potatoes
  • butter or olive oil
  • Pecorino Romano cheese
  • granulated garlic powder
  • butter or oil oil
  • cooking oil spray
  • fresh or dried assorted herbs
  • salt, pepper, and optional cayenne to taste
  • Optional: Italian-flavored breadcrumbs

Optional Toppings(after Cooking)

  1. shredded cheeses
  2. chopped fresh spinach with feta cheese
  3. chili with meat, beans, and cheddar 
  4. broccoli, cauliflower, and shredded cheddar
  5. any fresh or roasted chopped vegetables or stir fry
  6. cooked chicken buffalo wing sauce, ranch or blue cheese




Tips for Cooking Methods

  • for the air fryer: preheat the oven for 4 to 5 minutes first, spray foil and potatoes with cooking oil
  • for boiling: use herbs, seasoning, and cheese after cooking, always salt the water
  • for microwave: brush with butter before and after they are cooked add fresh herbs after cooking
  • for baking: bake the potatoes in the oven first when they start to open then add the butter and other ingredients fresh herbs are always better topping after cooking, dried herbs can be put on before or after
  • for a little heat add red pepper flakes or cayenne pepper

Hasselback or Fanned Potatoes



These potatoes are fancy potatoes and you may have a different name for them like hasselbacks!


They're a perfect addition for impressing your family and friends when hosting a dinner party and fun to bring to any outdoor picnic and get-together.


We love using different topping suggestions during the week to repurpose leftovers for instance topping with leftover chili, stir fry, or roasted vegetables to top these potatoes, they are certainly a showstopper in comparison to just a simple baked potato.

Here are several methods to make fan potatoes. These are potatoes with a parmesan-crusted top. They can be baked, air fried, boiled, or microwaved.

Ingredients

  • 6 Russet Potatoes washed
  • 1 or 2 tablespoons melted butter or olive
  • 1/4 cup Pecorino/Romano grated cheese or Parmesan
  • evenly sprinkle each one with roasted or granulated garlic powder
  • salt and pepper to taste
  • Fresh chopped Italian herbs or dried Italian seasoning IE: parsley, oregano, basil, and rosemary use whatever you like to taste
  • Optional: Italian-flavored bread crumbs, shredded mozzarella, or shredded cheddar
  • cooking oil spray for air fryer
  • Aluminum foil for air fryer
  • Baking casserole dish for oven roasting or microwave
  • Deep 3-quart saucepan for boiling

Instructions

  1. Slice all raw potatoes using a cutting board and sharp knife 1/8 to 1/4 inch thick leaving the bottom intact.
  2. Baking Method:
  3. Preheat the oven to 425 degrees.
  4. Place the cut potatoes in a baking dish and brush the top with butter or olive oil.
  5. Sprinkle the tops evenly with Italian flavored breadcrumbs, grated cheese, granulated garlic powder, salt, and pepper baked for around 35 minutes, and the spuds with open up and spread.
  6. Add more butter or olive oil, sprinkle with herbs, and cheese (add bread crumbs if using) and continue to bake until they are browned, soft and crispy on top. Usually take a complete hour.
  7. Boiled:
  8. Place the sliced fan-style potatoes in a 3-quart saucepan and boil for around 30 minutes.
  9. Drain and sprinkle with granulated garlic powder, cheese, and herbs, drizzle butter over them, and season with granulated garlic powder, salt, and pepper. (You can broil the tops if you would like a crispy top and shredded cheeses.
  10. Microwaved:
  11. Place in a microwave-safe dish, bush the fan potatoes with butter, herbs, granulated garlic powder, salt, and pepper.
  12. Microwave for 8 to 10 minutes on high.
  13. Drizzle the tops when completed with more butter, and sprinkle with cheese and breadcrumbs.
  14. Air Fried:
  15. Preheat the air fryer to 400 to 425 degrees( depending on how high your air fryer setting goes) for 5 minutes.
  16. Place the fanned potatoes on an oil-sprayed piece of tin foil.
  17. Spray the potatoes with oil spray and sprinkle with granulated garlic powder salt, and pepper.
  18. Air fry for 12 to 14 minutes until they open and get crispy brown on top.
  19. Remove carefully and top with cheeses and any other options you prefer.
  20. Note: for shredded cheese topping, after they are cooked on all methods you can add cheddar cheese and broil them or just let it melt on the hot potatoes.
  21. Optional toppings after the potatoes are cooked:
  22. steamed broccoli or cauliflower with cheddar cheese
  23. chili with meat, beans with cheddar cheese
  24. chopped fresh tomatoes
  25. chopped fresh spinach leaves with feta cheese
  26. any fresh or roasted chopped vegetables or stir fry
  27. cooked chicken buffalo wing sauce, ranch or blue cheese
