Eggplant Parmesan Pizza

Eggplant Parmesan Pizza is a great idea to satisfy eggplant parmesan and pizza lovers at the same time.

This pizza is very much like an open-faced sandwich of that favorite Italian vegetable casserole dish.

You may have had Eggplant rollatini, Eggplant Parmesan Casserole or even tried the famous Eggplant Sinatra Florentine recipes which are all fabulous by the way, so do try them if you love eggplant!

When mom would make fried eggplant, I always hoped there were leftovers for another meal and this would be my favorite, topping pizza with it.

Anyone that's ever ordered a hot baked submarine sandwich slathered with melted mozzarella cheese will appreciate this style of pizza!

Pizza Gourmet Style


There are plenty of Restaurants out there that considered this a gourmet-style pizza and will charge a considerable amount of money for an extra topping like this one.

This pizza is so easy to make and just think about making extra eggplant for another meal

You could make a larger eggplant, fry it and make it into Eggplant Parmesan casserole, freeze it for another meal!

We usually do make this pizza with leftover eggplant parmesan but love it so much, I have made the eggplant just for this pizza recipe!

Another favorite believe it or not is Chicken Parmesan leftover on top of pizza, just do this the same way, just add a little less
sauce on top since it's already loaded with tomato sauce.

Ingredients for Eggplant Parmesan Pizza


  • pizza dough
  • eggplant
  • milk
  • crushed tomatoes
  • all-purpose flour seasoned
  • Seasoning:
  • dried basil, oregano, salt, pepper, granulated garlic powder and more for garnishing
  • plastic bag to shake the eggplant in
  • canola oil for frying
  • shredded mozzarella cheese
  • Parmesan Romano blended cheese
  • red pepper flakes




Topping Suggestions


  • Cooked loose Italian sausage
  • Slices of hot or regular peppers
  • Ricotta cheese
  • Thinly sliced plum tomatoes in place of sauce
  • Sliced pepperoni

Eggplant Parmesan Pizza

A gourmet-style pizza topped with favorite fried eggplant parmesan and loads of melted cheese.

ingredients:

  • 1 lb pizza dough
  • 1 small eggplant was cut into thick  slices sprinkled lightly in salt, drained on paper towels, then rinsed (30 minutes)
  • 1 egg beaten with 2 tablespoons of water
  • 1 - 28 ounce can of crushed tomatoes
  • 2 cups of all-purpose flour seasoned
  • Seasoning:
  • 1 teaspoon each: dried basil, oregano, salt, pepper, granulated garlic powder and more for garnishing
  • 1 large plastic bag to shake the eggplant in
  • canola oil for frying
  • olive oil
  • 2 cups or more of shredded mozzarella cheese
  • 1/2 cup grated Parmesan Romano blended cheese
  • red pepper flakes

instructions:

How to cook Eggplant Parmesan Pizza

  1. Place drained and rinsed eggplant in beaten egg and water.
  2. Stretch the dough out on a greased pizza pan and set it aside. 
  3. Let rise to 1 inch thick for around 30 minutes in a warm place.
  4. In the meantime, place flour and seasoning in a plastic bag, 
  5. Heat 1- inch of oil in a frying pan.
  6. Shake the eggplant slices soaked in eggs mixture in the bag with the flour seasoning.
  7. Fry on medium heat until golden on each side and drain on paper towels.
  8. Spread some crushed tomatoes on the dough, add the eggplant more sauce on each one,
  9. Top with shredded mozzarella and sprinkle the whole top with grated cheese.
  10. Drizzle lightly with olive oil.
  11. Sprinkle with a little more granulated garlic, basil, and oregano evenly over the top.
  12. Bake at 400 degrees until the cheese is melted and the crusted is browned around 25 to 35 minutes.
  13. Add red pepper flakes if desired.

NOTES:

You will not use all the sauce, make a larger amount of eggplant and use the extra to make a layered dish of eggplant sauce and cheese.

Also, you can use canned pizza sauce and not crushed tomatoes.
