This recipe is super easy and quick to prepare plus it's perfect for any weeknight meal.
There are several kinds of hearty fish you can substitute like Chilean Seabass, and Halibut and if you have seafood allergies try using boneless chicken breast with this recipe, it will be fabulous!
Baking fish is so versatile no matter for cooking methods you can pan-fry, bake, or air-fry and we included all those methods in the recipe card.
Included in our recipe are capers and simple ingredients we use like balsamic vinegar, Italian flavored breadcrumbs, and lots of tasty fresh herbs.
There are many vegetables you can roast instead of tomatoes, so just substitute another for them if you're not a fan.

Side Dishes for Roasted Tomatoes and Baked Fish
Baked fish is the best all-in-one pan weeknight meal that's all done in 10 to 12 minutes!.
The white fish you choose should be hearty and a good thickness so it will hold together when serving.
We love this with Sauteed Spinach, Twice Baked Potatoes or a simple light Panzanella Salad.
Grilling fish is another wonderful way to cook this fish on a large disposable sheet pan will give those directions below also.

You can also add many other ingredients to the sheet pan while baking for a whole all-in-one-pan meal using some of our additional suggestions below.
Tips and Sheet Pan Additions
- use any kind of balsamic vinegar or white wine you would consider good drinking
- remember fresh fish cooks quickly
- do not overcook seafood use a meat thermometer
- if you prefer more of a poached fish add chicken broth to the sheet pan or frying pan instead of wine
- artichoke hearts, sliced potatoes, sliced onions, asparagus, and a zucchini squash medley are all great additions to your toppings or roasting alongside the fish
- do not cover the fish
- salt, pepper, and cayenne pepper to taste
- add a little hot sauce for our spicy seafood and drizzle with butter while baking
- Other Cooking Methods:
- outdoor grilling: oil spray large disposable sheet pan, spray with some olive oil or butter, add the fish, and seasoning, top with tomatoes and breadcrumbs, and the internal temperature reads 145 degrees.
- air fryer: place one piece at a time in an ovenproof casserole dish at 425 degrees oil spray a baking dish and add the fish, top with tomatoes sprinkle with bread crumbs drizzle with olive oil or butter, and air fry for 6 to 8 minutes or until the fish's internal temperature reads 145 degrees serve with freshly squeezed lemon juice on top
- pan-fried: saute the fish in olive oil and sear in a cast-iron skillet on both sides. Top with tomatoes breadcrumbs drizzle with butter and finish this in the oven until the fish flakes easily around the internal temperature of the fish is 145 degrees around 5 minutes.

This light breadcrumb topped fish with tomatoes is the perfect light meal, especially in the summertime.
It's super easy and quick to make and if you don't want to heat up that oven, grill this outdoors.
If you don't like fish chicken breasts boneless are a great substitution.
Baked Fish with Roasted Tomatoes and Capers

Baked Fish with Roasted Tomatoes and Capers crusty topping of cheesy breadcrumbs
Ingredients
- 2 pounds (or 4 pieces) cod or haddock fillet (halibut, tilapia, haddock, flounder, sea bass, or another hearty white fish)
- 2 to 3 fresh sliced plum tomatoes
- a few tablespoons of Italian flavored bread crumbs drizzle with 1 teaspoon of olive oil mixed together and set aside
- 4 cloves of fresh minced garlic (one for topping each piece of fish)
- 1 teaspoon each chopped fresh flat-leaf parsley, and fresh basil
- Pecorino Romano Cheese ( around 2 tablespoons to sprinkle on top)
- 2 tablespoons balsamic vinegar
- 2 tablespoons capers in brine drained
- 2 tablespoons extra virgin olive oil and more for drizzle over the top
- salt and pepper to taste
- cooking oil spray
Instructions
- Preheat the oven to 400 degrees.
- Place the plum tomato halves in a bowl and toss with the olive oil.
- Grease a baking casserole and add the tomatoes in a single layer.
- Bake the tomatoes until they become wrinkled and start to turn color (roasted).
- Halfway through the cooking process, pour the vinegar over them and toss evenly.
- Meanwhile salt and pepper the fish top with garlic, herbs, and place in a single layer in a greased baking dish.
- Spread the tomatoes over the top of the fish and add the capers for around 4 minutes before it's done sprinkle with breadcrumbs, cheese, and just a little drizzle more olive oil.
- Bake until the fish flakes, about 10 -12 minutes.
- For a crispier topping, you can broil this for 2 minutes on high heat in the oven.
