Not the traditional lemon flavoring but a touch of lime will bring you right to the tropics!

Baked or No-Bake

Some Ingredients You Will Need:



  • eggs
  • white sugar
  • grated lime zest
  • fresh lime juice
  • orange juice
  • tequila
  • triple sec
  • packages cream cheese, room temperature
  • vanilla extract
  • springform pan
  • aluminum foil
  • water
  • shortbread cookies
  • butter
  • pinch of cinnamon






Alternative Crust


Of course, a real Margarita has salt on the rim of a glass right?

Try this for the baked version of your cheesecake with a Pretzel Crust!

  1. 4 ounces salted pretzels (4 cups)
  2. 1/3 cup sugar
  3. 4 tablespoons unsalted butter, melted
  • Preheat oven to 375 degrees.
  • In a food processor, pulse pretzels until fine crumbs form.
  • Add sugar and melted butter; process until combined.
  • Press evenly in bottom and 1 inch up sides of a 9-inch springform pan.
  • Bake until golden brown, about 9 minutes.






Margarita Cheesecake No-Bake Bars Filling



  • 2 - 8-ounce packages of cream cheese, softened
  • 1 cup powdered sugar
  • 4 tablespoons tequila
  • 2 tablespoons fresh lime juice
  • 1 teaspoon orange juice
  • 1 tablespoon lime zest
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon Kosher salt and more for the top
  • a drop of green food coloring Optional


Margarita Cheesecake Bars Crust


  • 10 graham cracker sheets finely crushed
  • 1/4 cup powdered sugar
  • 1/2 teaspoon Kosher salt
  • 1/2 cup (1 stick) butter, melted

Directions



Crush the crackers in a food processor until fine add the other ingredients. Press into a 8 x 8 square brownie pan. Freeze this mixture for around 10 minutes


In a clean bowl:


Combine cream cheese, powdered sugar, tequila, lime juice, lime zest, and vanilla, and (food coloring if using) beat until smooth.


Spread the cream cheese mixture evenly on top of the frozen graham cracker crust. Top with a little sprinkle of salt then put this back into the freezer until set, around 30 minutes to an hour.


Cut into squares, keep refrigerated until ready to serve.

Tips for the baked cheesecake version



  • Always preheat the oven
  • The water bath is a must for cheesecake do not skip that method
  • Always use fresh lime
  • Let cool completely before removing from the springform pan
  • Refrigerate after cooling until ready to serve
  • Line the springform pan with parchment paper 
  • Wrap the bottom with foil to prevent leakage and keep the water bath out

Margarita Lime Cheesecake is a delicious creamy refreshing baked cheesecake we love to make this adult dessert all year long. As a bonus, there is another Margarita bar no-bake recipe listed for the non-bakers!

Ingredients:

  • Baked Margarita Cheesecake
  • Cheesecake filling:
  • 4 eggs
  • 1 3/4 cups white sugar
  • 1 tablespoon finely grated lime zest
  • 2-1/2 tablespoons fresh lime juice
  • 1 tablespoon orange juice
  • 3 tablespoons tequila
  • 1 tablespoon triple sec
  • 2- 8 oz packages cream cheese, room temperature
  • 1 teaspoon pure vanilla extract
  • 1 oil sprayed springform pan
  • aluminum foil
  • water
  • Crust:
  • 1 package shortbread cookies finely crushed or use the pretzel alternative in this post
  • 3 tablespoons butter melted
  • pinch of cinnamon

Instructions:

  1. Baked Margarita Cheese Crust:
  2. Mix together and press into a lightly sprayed springform pan. Wrap the pan on the sides and bottom with aluminum foil. Cut a piece of parchment paper to fit the bottom of the pan. Set inside.
  3. Add 1/4 inch of water in a large roaster pan laying the springform pan completely flat in that or you can put it on a different shelf in the oven. It helps keep the cheesecake from cracking and stays creamy like a custard filling.
  4. Baked Margarita Cheese Filling:
  5. In a large electric mixer beat eggs, sugar will light. Add softened cream cheese. 
  6. Whip still smooth around 5 minutes.
  7.  Add all the flavorings and mix well.
  8. Pour into the springform pan. 
  9. Bake at 350 degrees preheated oven for about 1 hour or till the middle is set. 
  10. Chill for several hours before serving.
  11. Garnish with sliced limes and a dollop of whipped cream on top.
