Mom made this often when I was a child and I finally figured out the right ratio of ingredients, so this is perfect for my taste and it's nice and creamy.
Stovetop Vanilla Pudding Recipe

This is a homemade vanilla pudding made on the stovetop to eat as is or use as a filling for pastry or cakes.
Ingredients
- 3 cups whole milk, divided
- 3 tablespoons cornstarch
- 1/8 teaspoon salt
- 3/4 cup sugar
- 3 egg yolks
- 1 tablespoon butter
- 1 teaspoon pure vanilla extract
Instructions
- Using just 1/4 cup of milk add this to a bowl with cornstarch and using a fork or whisk stir together.
- Whisk the rest of the milk in a small saucepan pot, with the salt, and sugar.
- Heat this mixture heating until it starts to get some heat but do not boil it.
- In a clean large bowl, whisk the eggs then slowly whisk in the warm milk from the saucepan whisking constantly into the eggs for around 2 minutes.
- Add the egg yolk mixture back to the saucepan pot, then add in cornstarch mixture.
- Keep whisking this mixture on medium heat until this pudding thickened.
- Once it's thick add the butter and vanilla and pour into a serving dish covered with wax paper (this keeps it from forming a skin).
- This is now ready to be chilled or cooled to warm to eat and can also be used to fill cakes.
