Ingredients
- 1 head of freshly washed and cleaned broccoli (use just the florets) cut into bite-sized pieces
- 1 red apple cored and diced
- 1/4 cup shaved or diced carrots
- 1/4 cup raisins
- 1/2 cup Greek yogurt or sour cream
- 2 tablespoons mayonnaise
- 1/2 teaspoon granulated garlic powder
- 1 tablespoon apple cider vinegar
- salt and pepper to taste
- 2 tablespoons honey
- Optional: 1/4 cup walnuts, almonds, pecans, or sunflower seeds
Instructions
- Core and either leave the peel on or off the apple and dice it, then place it in a serving bowl.
- Add to the same bowl cleaned broccoli florets from the fresh broccoli and cut that into bite-sized pieces.
- Add the nuts and raisins and stir that all together.
- In a small bowl whisk together the mayo, yogurt, salt, pepper, honey, and cider until just blended evenly.
- Pour the dressing over the broccoli mixture and toss to coat evenly together.
- This can be served right away or chilled to be eaten later.
- Note: We usually refrigerate this salad either overnight or at least an hour before serving to meld the flavors nicely but it's not required.
