Grilled Glazed Sweet Potato Kabobs
A delicious BBQ isn't perfect without grilled sweet potatoes as a side dish. Here is our version of how to grill them!
Prep time: 5 MinCook time: 10 MinTotal time: 15 Min
Ingredients
- 3 to 4 sweet potatoes washed and microwaved for 3 to 4 minutes
- 1/3 of a cup of maple syrup or honey ( brown sugar can be used but I would melt the butter together with it first before brushing to dissolved the sugar)
- 3 tablespoons of melted butter
- pinch of cinnamon or more to taste
- salt and pepper to taste
- wooden or metal skewers
- cooking oil spray
- optional: coconut, orange zest,
- Note: sprinkle with granulated garlic powder and chopped parsley with melted butter for a savory kabob
Instructions
- Heat the grill on high.
- Either peel, cube and boil for a few minutes or microwave the potatoes for 4 minutes then peel and cube.
- Remove skins, then slice potato in half then into cubes.
- Thread on skewers (we used wooden soaked in water) and oil spray grill grates or a cast iron pan with grids.
- Heat the grill (for indoor heat the cast iron gridded pan first and spray with cooking oil).
- Place on a gridded cast iron pan or outdoors on a hot grill and continue to cook for around 10 minutes until cooked and grill marks form.
- Whisk together all the ingredients for the glaze.
- Brush with a mixture of 1/2 cup of maple syrup and 1/4 teaspoon cinnamon.
- Grill for around 1 more minute, you can also add the coconut and toast for a few minutes, watch carefully or it will burn or stick to the grates.
- Remove from grill.
- Brush again with more syrup if preferred extra sweet and sprinkle with coconut and orange zest.
