- crumbled blue cheese or use feta
- butter or use unsalted but add more salt to the recipe
- egg we have not tried an egg substitute
- seasonings: substitute another you prefer if these flavors aren't your style: red pepper flakes,garlic powder, rosemary, black pepper, dried parsley flakes,
- honey: add maple syrup or corn syrup if you don't have honey
- kosher salt: table salt will also work
- water

- DO NOT overmix the dough, it will not be flaky and become tough
- use all-purpose flour or a combination of all-purpose and whole-grain flours never 100% wheat flour

Ingredients
- Blue Cheese Crackers:
- 2 cups all-purpose flour
- 3/4 cup crumbled blue cheese
- 1/4 cup butter
- 1 egg
- 1 teaspoon red pepper flakes
- 1 teaspoon garlic powder
- 1/2 teaspoon rosemary
- 1/4 teaspoon black pepper
- 1 teaspoon dried parsley flakes
- 1 teaspoon honey
- 1/2 teaspoon kosher salt
- 1 to 2 tablespoons water
Instructions
- Blue Cheese Cracker Directions:
- Mix all ingredients, knead, and form into two logs.
- Wrap in plastic wrap or zip lock bag.
- Refrigerate overnight.
- Roll out for thickness for squares, and rectangles and cut with a pastry cutter for the pretty edges or just slice logs in 1/4 inch thick rounds.
- To get them to shine brush with a beaten egg yolk or egg beaters work well too.
- Bake at 400 degrees for 10 to 12 minutes or until the edges are golden brown.
