You can actually cut the cucumber with a cookie cutter and shape them for a pretty party-themed event.
If you have meat eaters only try chopped some deli meats like turkey, salami or black forest ham and mix it with a little low-fat dressing then top your cucumber with avocado and tomato garnish.
Leftovers meat is great to use also like cooked finely chopped rotisserie chicken.
Just adding your favorite spreads like cream cheese or hummus will start endless varieties of finger foods everyone will love.

Avocado Cucumber Tomato Appetizers

A refreshing little appetizer perfect for summer light snacks or a holiday Christmas-themed appetizer, these little avocado bites with cucumber and tomato are a perfect blend of flavors.
Ingredients
- 1 avocado peeled and cubed fine and slightly mashed
- 1 cucumber cut into thick slices
- 2 teaspoons lime juice bottled or fresh squeezed
- 1/4 teaspoon of garlic powder
- sea salt or kosher salt to taste
- freshly cracked black pepper to taste
- grape tomatoes sliced ( this is a garnish for each one on top)

Instructions
- Clean and wash then dry the cucumber, avocado, and tomatoes.

- Peel avocado removing the skin.
- Mash avocado in a small bowl, add the lime juice, 1/4 teaspoon garlic powder, freshly grated black pepper, and salt to taste.
- Smash with a fork leaving some chunks.

- Assembly:
- Start with cucumber on the bottom, add a tablespoon of the avocado mixture, top with sliced tomato.
