The kids love it, the family enjoys it all winter long and they don't have to wait for a special occasion to get that pasta fix they love during a holiday like Thanksgiving, Christmas or Easter!
I love making this as a start for my guests and it goes great with a Pot Roast meal or really just about anything you serve.

The Soup is so Versatile!
You can make this soup two different ways, full fat or low fat.
Either way, we love it, and the kids can't tell the difference with low-fat soup changes.
I usually like to add some fennel seed to the ground turkey to make it taste like sausage.
The soup is full of great flavors and you can even substitute whole wheat pasta to make it even healthier!
Just remember, you can adapt this any way you like by adding fat-free, low fat or full-fat ingredients!
If you're in a hurry you can even use fat-free egg noodles instead of the pasta suggestions.
Ingredients you will need to make Lasagna Soup:
- chicken broth 99% fat-free
- fresh plum tomatoes or canned
- tomato sauce or jar store-bought your favorite kind
- minced garlic
- bell pepper finely chopped Optional
- chopped parsley, basil, oregano fresh or dried
- Italian mild turkey sausage
- ground turkey or ground sirloin hamburger
- olive oil
- broken whole grain lasagna noodles
- grated Romano cheese, more for garnishing
- salt and pepper to taste
- pinch of cayenne
- Note: if using all hamburger and no sausage add 1 teaspoon fennel seed.

I usually use ground turkey and turkey sausage for this soup, however, you can use ground sirloin, no sausage and add 1 teaspoon of fennel seed.
The meat will still have a sausage flavor even if you use all ground turkey, the fennel will add that additional flavor you get from a baked lasagna real pasta dish.
The soup and aroma are fabulous for this soup and the sauce is meaty and rich.

Toppings are whatever you like in a regular baked lasagna, here are some suggestions:
- Ricotta Cheese
- Shredded Mozzarella
- Red Pepper Flakes
- Chopped Hot Peppers
- Italian Flavored Croutons, breadsticks or bread

Here is a hearty delicious spot on flavored lasagna soup that is perfect during the winter months and when you have that craving for the famous pasta dish.

ingredients:
- 32 ounces of homemade chicken broth or use canned low sodium 99% fat-free
- 2 lbs of fresh plum tomatoes diced or use a 28 ounce of whole tomatoes rinsed then diced to lower the salt content
- 2 cups homemade tomato sauce or jar store-bought your favorite kind
- 2 teaspoons minced garlic
- 1 bell pepper finely chopped and also optional (I put mine in the food processor)
- 1/2 teaspoon each chopped parsley, basil, oregano fresh or dried
- 4 links of Italian mild turkey sausage snipped in small slices with a kitchen shears
- 1 pound of ground turkey or ground sirloin hamburger
- (If not using sausage add an extra cup of ground sirloin or turkey)
- 1 tablespoon olive oil
- 2 cups broken whole grain lasagna noodles
- 2 teaspoons grated Romano cheese, more for garnishing
- salt and pepper to taste
- pinch of cayenne
- Note: if using all hamburger and no sausage add 1 teaspoon fennel seed.

How to cook Lasagna Soup
- In a large dutch oven add the tablespoon of olive oil, both types of meat, and peppers.
- Fry until the bottom starts to turn brown, stirring, this takes around 10 minutes.
- Add garlic and cook one minute.
- Next, add all the liquids and spices.
- Cook for around 20 minutes.
- Add broken up lasagna noodles and 2 teaspoons grated cheese.
- Ladle into oven proof bowls, top with shredded fat-free or low-fat mozzarella cheese and broil till brown.
- You can also add a dollop of fat-free ricotta cheese instead or both.
- Garnish with more grated cheese
- Note:
- If you love bread with your meals, use whole grain bread cut into cubes baked in the oven with all the above spices used and sprinkle with the addition of garlic powder. Toss in with one teaspoon of olive oil till brown and crisp, add to your soup for garnish.!
- For a full-flavored soup, not low fat, use all regular full-fat ingredients and products and serve with garlic bread, garlic sticks or hard-crusted Italian bread.
