Crockpot Spanish Rice Recipe

Crockpot Spanish Rice Recipe is a great side dish with any meal!

I usually just eat this as a whole meal, add some garlic bread, a salad loaded with beans and vegetables, and a good Chianti wine and I'm good to go!

Beef, peppers, rice, and tomatoes all blended and slow-cooked into an all-in-one pot easy weeknight meal!

This slow cooker recipe is super easy and if you're a busy cook, this will be a delicious recipe for you to make while doing other things all day to free up your time.


The fresh tomato along with ground beef makes this an all-in-one pot easy meal and very economical to feed a large family.


We just love the flavors slow cooking produces and this is even terrific to repurpose leftovers in a flour tortilla for another meal!


Just check out our simple ingredients and the slow cooker/crockpot will do it's magic in making this meal completely simplified.


The only thing we do cook is the meat for extra flavors and coloring although this step isn't necessary you can throw it in raw, however, it will produce much more grease than we desire.




Crockpot Spanish Rice Recipe


2 pounds ground beef or ground turkey
2 cloves finely minced garlic
1 green pepper, chopped
1 (28- ounce) can of diced tomatoes
1 (16- ounce) can of tomato sauce
1 1/4 cups water(or use chicken broth if you have some on hand)
1/4 cup red wine or sherry ( this is optional if you don't want to use wine add more broth)
2 1/2 teaspoons chili powder (or to taste)
1/4 teaspoon salt
1/2 teaspoon each garlic powder, black pepper, basil, and oregano
pinch of cayenne pepper
2 tablespoons Worcestershire sauce
2 cups long-grain raw rice
3 stalks of celery, finely chopped
grated pecorino romano cheese, or anothe cheese you like(optional)

Brown beef in skillet with garlic and drain off fat.
Put all ingredients in the slow cooker, except cheese.
Mix well. Cover and cook on low for 6 hours or on high for 3 hours add more liquid if the rice starts to absorb too much water or broth just to moisten.
Around 30 minutes before cooking time is done, sprinkle cheese on top.
