Baked Blueberry Donuts

These Baked Blueberry Donuts are a favorite camping morning breakfast during berry season and can make ahead of time.

Perfect for road trips, and an easy treat for a busy weekday morning, and a fun treat for an anytime dessert.

These cake-like donuts are full of fresh berries and can be made with a coffee cake-crumb bottom (which is optional), drizzled with a white ganache, or serve sliced, filled with cream, and topped with fruit for a dinner dessert.

If you're looking for a healthier style of donuts this is the perfect recipe and super simple using a donut pan to shape them perfectly.

The juicy berries keep them moist, fresh for a few days so make a double batch they won't last long.

When I first got my donut pan, I was so excited to see how easy they shaped them and delicious they turned out.


I really didn't think the results would be so fantastic.


I love how simple these were and no standing around trying to fry them the old-fashioned way.


These healthier version donuts can be made with just about any fruit!

Other Additions:


  1. Pumpkin Seeds or any kinds of nuts you like, pecans, walnuts, macadamia or great choices!
  2. Raisins, coconut
  3. dried fruits of any kind chopped
  4. Chocolate Chips
  5. Apples, berries of any kind, chopped fresh cherries
  6. drizzle with white chocolate ganache and sprinkles
  7. add lemon or orange zest
  8. add flavored extracts of any kinds to the batter, IE  anise, lemon, rum, almond
  9. dust with powdered sugar for garnishing

Tips


  • Always cream the sugar and butter first
  • Add red fruits to the batter for the 4th of July or green and red cherries for Christmas morning!
  • Make sure you greased the donut pans
  • Always preheat the oven first
  • Make sure the donuts are cooled before frosting them
  • Use tinted frosting and colorful candies to decorate for holiday themes

Baked Blueberry Donuts

These are a baked blueberry crumb donuts with a ganache on top. Delicious and easy to make in no time without frying!

Ingredients

  • Donut Batter:
  • 1/ 3/4 cup all-purpose flour + 1/4 cup cornstarch 
  • 3/4 cup brown sugar 
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt 
  • 3/4 cup milk 
  • 2 eggs, lightly beaten 
  • 2 tablespoons butter 
  • 1 teaspoon pure vanilla extract 
  • 1/2 cup fresh blueberries or drained canned blueberries (save some extra for garnishing) pinch of cinnamon
  • Cinnamon Glaze:
  • 1/4 cup butter
  • 3 ounces white chocolate
  • melt chocolate and butter in the microwave for one minute
  • 1 3/4 cup powdered sugar
  • 1/4 teaspoon cinnamon
  • 5 tablespoons milk or more till free-flowing
  • Crumb Topping:
  • 1/2 cup white sugar
  • 1/3 cup all-purpose flour
  • 1/4 cup butter, cubed (half a stick) cold
  • 1/4 teaspoon ground cinnamon
  • Use a food processor for even blended crumbs or use a fork to cut into this mixture to make fine crumbs.

Instructions

  1. Blend together the flour, cornstarch, sugar, baking powder, and salt into a large bowl.
  2. Pour in the milk, eggs, butter and vanilla extract, and cinnamon.
  3. The batter is similar to a muffin, so do not over mix.
  4. Fold in the blueberries till evenly blended.
  5. Lightly grease a donut pan with non-stick cooking spray.
  6. Crumb Mixture:
  7. Use a food processor for even blended crumbs or use a fork to cut into this mixture to make fine crumbs.
  8. Add the crumb mixture to the bottom of each donut round.
  9. Filling the pan:
  10. Fill a ziplock bag (or use a small spoon) with batter, snip the end slightly not too big!
  11. Pipe into the donut pan, filling each one halfway.
  12. Bake the doughnuts at 400 degrees for 8-10 minutes.
  13. The donuts are done when they spring back or come out clean with a toothpick.
  14. Turn immediately onto parchment paper.
  15. While they cool, make a glaze.
  16. In a large bowl add powdered sugar.
  17. Mix in the melted butter and white chocolate mixture, cinnamon, milk, and vanilla extract.
  18. Beat until smooth to combine. If the glaze is too thick, add additional milk, 1/2 teaspoon at a time until it flows freely.
  19. Cool and drizzle glaze over the top.
  20. Allow the glaze on the donuts to dry.
