Truffles are made with a good grade of chocolate on the outside and fabulous assorted fillings inside then garnished with various decadent tasty coatings to cling to the melted chocolate.
These fabulous candy confections became one of the most popular forms of chocolates to consume and is considered one of the finest chocolate treats in the world.
The reputation for this creamy delicious bite is one of luxury and extravagance since its birth many years ago.

Old fashioned truffles with liqueurs, Keto Style and Oreo Truffles.
I have written each one below for your convenience on which one you prefer to make.
Ingredients for Oreo Balls
- cream cheese at room temperature
- chocolate creme-filled Oreo cookies are put through a food processor producing fine crumbs ( you can also use any of the flavored cookies available)
- optional: white or semisweet chocolate, melted or roll into various suggestions below
Suggestions:
- Dip them into melted chocolate, white, milk, etc,
- roll them into powdered sugar
- chocolate cocoa powder
- chopped walnuts,
- toffee chips
- mini chocolate chips,
- coconut
- chopped cherries
- crushed cookies crumbs
- sprinkles or colored sugars.
Store in the refrigerator.
Homemade Old Fashioned Chocolate Truffles Ingredients:
- semi-sweet chocolate chips or really good chocolate
- cup heavy cream
- Frangelico ( have also used Regular Rum, Baileys, Kaluha, Coconut Rum or Gran Marnier all work well)
Garnish
- cocoa powder
- coconut shredded
- macadamia finely crushed or hazelnuts, pistachios, walnuts, pecans, chopped fine.
- assorted sugars, sprinkles, and ground pumpkin seeds for allergies. etc.
Keto and Sugar-Free Chocolate Truffles
- 3 oz unsweetened chocolate
- 1 tablespoon coconut oil or ghee
- 1/4 cup heavy cream
- 3/4 teaspoon stevia glycerite (equivalent to 1/4 cup sweetener)
- 1 tablespoon pure vanilla, rum flavoring, orange extract or any other extracts you like ( mint is perfect for the holiday)

Truffle Candy History
Back sometime in the 1800s, the cocoa press was invented which allowed the chocolate makers to separate cocoa butter from cocoa beans.
That is where chocolate solids came from.
Then with some trial and error with an experiment in cooking times, a silky chocolate cream was born.
Here in America and all over the world, this is referred to as ganache and is the main ingredient layer to truffles.
It is written that around 1895, the first chocolate truffle was invented in Chambery, France by M. Dufour, and then by the 1900s the rest of Europe was making truffles.
Not long after that the rest of the world got introduced to this decadent candy confection.
Easy candies to make and there are so many variations here in the United States.
Here are 3 recipes for Truffle no-bake candies. One is Oreo flavored ball truffle, the other is the famous Chocolate creamy truffles and lastly one that Keto and sugar-free. All of them are delicious. They make great gifts, perfect for any occasion and so easy to make.

How to cook
- Oreo Balls
- 8 ounces of cream cheese at room temperature
- 1- (14 ounces) package of chocolate creme-filled Oreo cookies put through food processor producing fine crumbs ( you can also use any of the flavored cookies available)
- optional: 4 ounces white or semisweet chocolate, melted for dipping or refer to other suggestions below
- Place the cookies in a food processor and pulse until they are fine crumbs.
- Whip the cream cheese with a flat beater in an electric mixer bowl until light
- add the crumbs and pulse again until a sticky dough forms.
- Place them in the fridge to chill for at least 2 hours. Roll into balls and then into your favorite toppings.
- Use your hands to form the dough into 1″ round balls and place them on a cookie sheet lined with parchment.
- Suggestions: Dip them into melted chocolate, white, milk, etc, or just roll them into powdered sugar, chocolate cocoa powder, chopped walnuts, toffee chips, mini chocolate chips, coconut, chopped cherries, or crushed cookies crumbs, sprinkles or colored sugar.
- Store in the refrigerator.
- Anyone that loves no-bake cookies will love these cookie truffles.
- Homemade Chocolate Truffles:
- 1/2 lb semi-sweet chocolate chips or really good chocolate
- 1/2 cup heavy cream
- 2 tablespoons Pure Vanilla Extract (or Alcohol to use Frangelico ( have also used Regular Rum, Irish Cream, Kaluha, Coconut Rum, or Gran Marnier all work well)
- Topping Garnish:
- 1/4-1/2 cup cocoa powder
- 1/2 cup coconut shredded
- 1/2 cup macadamia finely crushed or hazelnuts, pistachios, walnuts, pecans, chopped fine.
- assorted sugars, sprinkles, etc
- Instructions:
- Put the chocolate chips in a glass bowl.
- In a small saucepan, bring the cream to a boil and then pour it over the chocolate.
- Shake the bowl gently to let the cream settle into the chocolate, then cover the bowl with a plate or a lid to allow the chocolate to melt (takes about 5 minutes).
- Whisk to the mixture until smooth and shiny. Stir in the liqueur. Cover the unit of chocolate tightly with the wrap and put it in a cool place for about two hours to firm up.
- Line a baking sheet with wax or parchment paper. Use two spoons to drop 1/2 to 1-inch mounds of chocolate on the paper.
- Shape them into balls.
- Put ground nuts and cocoa/ground chocolate onto separate plates or bowls, and roll the truffles in the chocolate/and or nuts/coconut or sprinkles or your choice. Use a clean spoon to help you coat them. Refrigerate the truffles until ready to serve.
- To serve, gently scoop the truffles out of the cocoa with a fork and put them in small paper cups, keep refrigerated until serving.... truffle freeze well also, however not good for traveling they need to stay cold until serving.
- Keto and Sugar-Free Chocolate Truffles
- 3 oz unsweetened chocolate
- 1 tablespoon coconut oil or ghee
- 1/4 cup heavy cream
- 3/4 teaspoon stevia glycerite (equivalent to 1/4 cup sweetener)
- 1 tablespoon pure vanilla, rum flavoring, orange extract, or any other extracts you like ( mint is perfect for the holiday)
- I start by chopping the chocolate to stay chunky using a food chopper.
- Place the chocolate and coconut oil in a shallow bowl, then either add to a double boiler or microwave until softened.
- Add the cream and stir until blended then add the stevia and vanilla or another flavoring you like.
- After this is well blended, add to a small pan and simmer on the lowest setting until your chocolate is melted completely.
- Place in a freezer container and cover. Freeze this mixture for 30 minutes.
- I use a melon ball scooper that is covered in unsweetened cocoa powder to shape the balls, they drop them into the various coating bowls mentioned below.
- You will need several little bowls filled with the garnishes of whatever you want to roll them in.
- My garnish suggestions: unsweetened cocoa powder, nut flours like oat or almond flour, sugar-free powdered sugar, crushed pumpkin seeds for nut allergies, crushed sugar-free cookie crumbs, sugar-free coconut, crushed sugar-free hard candies that are colorful for the holiday theme or any crushed nuts ( pistachios are perfect for Christmas). You may have to coat them twice.
- These need to be stored covered in a tin in paper liners and in the refrigerator.
- They will stay fresh for around 4 days.
