This is a tiny mini donut called a fritter made with pumpkin puree. These pumpkin fritters are the perfect kickoff for fall and a delicious little fried cake bite rolled in powdered or cinnamon sugar.
Ingredients
- 2 cups flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1/4 teaspoon each ginger and nutmeg
- 1/4 cup brown sugar
- 2 large eggs
- 2 tablespoons butter softened
- 2 teaspoons vanilla extract
- 3/4 cup buttermilk
- 3/4 cup pumpkin puree
- oil for frying around 3 cups of vegetable oil or canola
- Garnish: cinnamon and sugar mixture or powdered sugar
Instructions
- Heat the oil in a large deep saucepan to be around 2 inches deep on medium-low heat ( it's number 3 on my dial).
- In a large bowl first beat the eggs with sugar, cinnamon, ginger, nutmeg, salt, vanilla, and butter.
- Add all the rest of the dry ingredients (flour and baking powder) then slowly add the buttermilk then fold in the puree.
- Drop into hot oil with either a tablespoon or a melon ball scoop.
- Cook on both sides until golden brown around 4 minutes total flipping once ( I take one out and test the middle with a toothpick to ensure the batter is cooked).
- Drain on paper towels.
- Roll in powdered sugar or cinnamon sugar while warm and again when cooled.
