  • all-purpose flour
  • oatmeal pulsed through a food processor till fine
  • salt
  • baking powder
  • unsalted butter softened
  • brown sugar, packed
  • maple syrup
  • maple flavoring
  • eggs
  • optional: finely chopped walnuts

Easy Oatmeal Filled Cookies


These oatmeal-filled whoopie pies are so easy and impressive, everyone always thinks they were store-bought.

Maple-filled little oatmeal cookies, with a soft fluffy filling and delicious inside.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup oatmeal pulsed through a food processor till fine
  • 3/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 cup (1 stick) unsalted butter, softened
  • 3/4 cup brown sugar, packed
  • 1/3 cup maple syrup
  • 1/2 teaspoon maple flavoring
  • 2 large eggs
  • optional: 3/4 cup finely chopped walnuts

Instructions

  1. Mix sugar and butter together till fluffy. Add flour, oatmeal, eggs then the rest of the dry ingredients together till well blended.
  2. Fold in the nuts.
  3. Roll in a ball and flatten onto a parchment-lined cookie sheet and bake for 8 to 11 minutes at 350-degree oven till set.
  4. In the meantime make the filling for them below.
  5. Cool on the wire rack completely before filling.
  6. Filling
  7. 8 ounces cream cheese
  8. 4 cups powdered sugar
  9. 1/4 teaspoon maple flavoring
  10. In the meantime combine in a bowl cream cheese, sugar, and flavoring blend until smooth.
  11. When cookies are cool sandwich them together with this filling.
  12. Cookies will store better in the freezer if you don't eat them all at once. Take them out as needed or they will dry out.
