Cajun Shrimp or Chicken Topped Salad

These shrimp or chicken are a taste of Mardi Gras style with the crispy coating cajun seasoning.


I also adapted this recipe with the addition of  Italian herbs that made it just a little bit more spectacular in flavor.


This has a light panko breadcrumb coating and fried to perfection.


We also have substitutions for adapting the recipe due to seafood allergies using your favorite boneless meats.

How versatile is this easy cajun shrimp dish? The coating is great on any meat or seafood you choose and if you're not a salad lover use pasta, rice, quinoa, or home-fried potatoes as a side dish instead.



Seriously, rice and beans, are a great choice also greens aren't your thing, but not matter what you choose fried shrimp is off the charts delicious.

Tips

  • cook any seafood and place it on wooden skewers
  • make homemade cajun seasoning ahead of time
  • use extra-large shrimp
  • use only vine ripe tomatoes for best results
  • serve meat hot on cold salad
  • use any boneless meats you prefer chicken, steak, pork, 
  • mixed greens, spinach, arugula can be used 
  • outdoor grilling: oil spray a cast-iron skillet
  • air fryer: 425 degrees oil spray the basket for 3 minutes
  • baked 400 degrees for 12 minutes

Cajun Shrimp or Chicken Topped Salad

A delicious cajun slightly bread crumb coated shrimp to top a salad. Perfect for a light lunch or entertaining guests. Enjoy a bit of the Mardi Gras flavors cajun style!

Ingredients

  • 1 pound extra large shrimp peeled and deveined and tales removed
  • canola or vegetable oil for frying 
  • 1 cup flour 
  • 1 teaspoon salt 
  • 1 teaspoon pepper 
  • 3 eggs 
  • 2 tablespoons milk or cream
  • 1 cup Italian seasoned Panko breadcrumbs
  • 1 tablespoon cajun seasoning 
  • 1 tablespoon Italian mixed herbs, oregano, thyme, basil, and parsley

Instructions

  1. In a large saucepan heat the oil to about 1/2 inch deep, it should read around 350 degrees on a thermometer.
  2. Set up your seasoning station:
  3. Set up a pie plate with the flour, salt, and pepper.
  4. In a small bowl whisk together the eggs and milk.
  5. In the last bowl add the cajun seasoning and Italian mixed herb seasoning.
  6. Add the shrimp to the flour mixture.
  7. Next, dip into the egg mixture and then coat the shrimp with breadcrumbs.
  8. Using thongs, add the shrimp one by one to the hot oil until golden brown around 3 minutes.
  9. Place on paper towels to drain.
  10. Top assorted salad greens whatever you prefer.
  11. Note: boneless thinly sliced meats are done the same way cooking time will very on thickness.
  12. I also for presentation like to add them to skewers and place them on the salad after these are fried and cooled slightly.
  13. Cooking Methods:
  14. Air Fryer: place on the basket set the fryer to 425 degrees for 3 minutes or until browned.
  15. Grilling: Add cooking spray to a cast-iron skillet and grill until browned on both sides for 3 to 4 minutes.
  16. Baked: Preheat the oven to 400 degrees, place shrimp or meat on a baking sheet and cook until golden browned
  17. For Cajun Seasoning Recipe:
  18. 3 tablespoons smoked paprika
  19. 2 tablespoons fine kosher salt 
  20. 2 tablespoons garlic powder 
  21. 1 tablespoon ground black pepper 
  22. 1 tablespoon ground white pepper 
  23. 1 tablespoon onion powder 
  24. 1 tablespoon dried oregano 
  25. 1 tablespoon cayenne
  26.  1/2 tablespoon dried thyme
  27. Mix together store in a mason jar in a cool dry place.
  28. This stays fresh for up to 1 year.
