Blackberry Cobbler Cake

This super easy Blackberry Cobbler Cake has so many names you may be more familiar with cobbler, buckle, shortcake, whatever you name this it's a delicious dessert made with sweet fresh blackberries!

Sometimes we use other fruits instead of berries because this batter is so versatile and so simple you don't need to like baking or be a good one to make this dessert.

Growing up we went blackberry picking as soon as the season was in full bloom and berries grew wild in the fields in Utica, (my hometown in Central N.Y.) and were plentiful.

Another few favorite fruit desserts we love are Red Raspberry Pie and Red Raspberry Cobbler remains from my childhood some fantastic memories of my mom's baking.

Not a Blackberry Lover? Try These Fruit Substitutions:

  1. sliced apples
  2. blueberries
  3. mango
  4. bananas
  5. pears
  6. Bing pitted fresh cherries
  7. peeled fresh plum
  8. peeled pitted peaches
  9. drained or fresh mandarin oranges
  10. boysenberries or red raspberries
  11. not listed? try your favorite fruits and if they are on the tart side add some extra sugar and a dash of cinnamon

Homemade Fruit Desserts Made Super Easy


If you need a quick easy dessert for hosting a party, this is it just add some store-bought whipped cream, or if you have the time whip up some fresh heavy cream you just need 1 pint of heavy cream and 3 teaspoons of sugar beat until stiff peaks form (don't overbeat it!).

This can turn into an elegant dessert served in martini glasses so get some pretty style glassware and you'll have one amazing cobbler to serve up for friends and family!

Tender cake with berries and cream...a quick perfect summer dessert. Since it's a short season for berries, take advantage of these beautiful berries when they are in abundance and make a delicious cobbler, don't miss out on this one!

Ingredients

  • 1 stick butter (1/2 cup) melted
  • 1 1/4 cup sugar
  • 1 cup flour
  • 1 1/4 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup milk
  • 1 teaspoon of vanilla extract or lemon extract
  • 2 cups blackberries, fresh or frozen blotted dry if using frozen or they are wet
  • 3 tablespoons sugar
  • Optional: mix in 1 teaspoon of cinnamon with the 3 tablespoons of sugar for the topping
  • Garnish: whip up some fresh heavy cream you just need 1 pint of heavy cream and 3 teaspoons of sugar beat until stiff peaks form (don't overbeat it!)

Instructions

  1. Preheat the oven to 350 degrees.
  2. In a large mixing bowl add the sugar-flour baking powder, and salt (all dry ingredients) and whisk together.
  3. Mix in the milk., extract with butter using a spatula to blend evenly do NOT over-mix.
  4. Grease a 9-inch square pan or baking dish and add the batter.
  5. Spread this evenly then top with berries and add the sugar on top.
  6. Bake this for around 1 hour or until golden brown on top.
  7. Serve with whipped real sweetened cream or ice cream.
