Chunky Smashed Potatoes and Carrots
What better way to made a quick side dish than to combine two great vegetables in one bowl that's not only tasty but much more colorful than a plain potato?

The ease of this potato side dish and combinations are endless with possibilities.
Tips and Topping Suggestions
- Yukon gold, white potatoes, and Idaho are preferred
- chopped up fingerling carrots will cook quicker
- Topping Suggestions: (leave plain with salt, pepper add topping if preferred)
- Cooked crumbled bacon and shredded sharp cheddar cheese, sour cream, chives chopped
- Fresh chopped dill, freshly chopped parsley, basil, and parmesan cheese
- Shredded swiss, provolone, mozzarella, parmesan with chopped cooked ham
- Leftover cooked meats like (or even deli meats like ham and roast beef), sliced hotdogs, crumbled cooked hamburger meat, kielbasa with your favorite shredded cheese melted on top
- Black beans, ground beef with taco seasoning, shredded cheddar cheese
- Cooked sliced Italian sausage, roasted peppers, escarole, and Parmesan cheese, sprinkle with breadcrumbs
- Not a fan of carrots try another vegetable you prefer or even sweet potatoes as a change
- Leave out the carrots and just make these delicious potatoes with the oil, butter, and garlic with breadcrumbs on top with your favorite chopped fresh herbs like rosemary, thyme, parsley, basil, oregano (you can choose one or a medley)
Easy Cooking Methods for Chunky Smashed Potatoes and Carrots
- Boiled: cut the potatoes into small cubes (boil skin off or on the potatoes) add fingerling carrots for around 20 minutes
- Microwaved: place cubed potatoes and carrots in a microwave-proof boil with either chicken broth or water, and microwave for around 11 minutes
- Roast: Place the cubed potatoes and carrots on a baking sheet tossed or oil sprayed with cooking oil (preferably olive oil) and roast at 400 degrees for around 30 minutes

Chunky Smashed Potatoes and Carrots in Aglio e Olio

Here is a basic easy side dish with potatoes and carrots tossed in a garlic butter aglio e olio
Ingredients
- 4 to 6 cubed and peeled potatoes (Yukon gold, white, Idaho)
- 1 cup or more of crinkled cut carrots, fingerling carrots chopped or use canned carrots rinsed
- 1/4 cup of olive oil
- 3 tablespoons melted butter
- salt, pepper to taste
- Optional garnish:
- 1/4 cup Italian flavored breadcrumbs
- 1/4 cup Parmesan and Romano blended grated cheese
- red pepper flakes to taste
- 3 cloves of finely minced garlic sauteed ( or use 1 teaspoon granulated garlic powder and no need for sauteing)
- Herb suggestions depending on what your family likes:
- freshly chopped dill, rosemary, parsley, basil
- dried oregano
Instructions
- Cube potatoes with or without skin.
- Cut carrots in small pieces if using fingerling style.
- Place both the carrots and potatoes in the same bowl and pick a cooking method:
- Boiled: cut the potatoes into small cubes (boil skin off or on the potatoes) add fingerling carrots for around 20 minutes
- Microwaved: place cubed potatoes and carrots in a microwave-proof boil with either chicken broth or water, microwave for around 11 minutes
- Roast: place the cubed potatoes and carrots on a baking sheet tossed or oil sprayed with cooking oil (preferably olive oil) and roast at 400 degrees for around 30 minutes
- While the potatoes and carrots are cooking make the aioli.
- (See note at the bottom for quick method.)
- In a small saucepan add the butter and olive oil.
- Saute the garlic for 2 minutes, do not brown.
- Remove from heat.
- Add the herbs you would like to use.
- Pour the aioli over the cooked potatoes and carrots and toss gently.
- Optional:
- Sprinkle the top with breadcrumbs and grated cheese. red pepper flakes if desired and serve.
- Note Quick Method: if not using freshly minced garlic, then just melt the butter, mix in the olive oil, granulated garlic, and herbs. No sauteing is necessary, just pour the butter mixture over the hot potato/carrot combination
