Usually in Florida, we have the spiny lobster tails and they aren't as sweet and tender as Maine, but they are not that easy to come by.
Broiled lobster is very easy to make and with garlic butter, it's, of course, a little bit Italian right?
Ok, that's a bit of a stretch I know, but it's my favorite seafood and during the Christmas Eve holiday and lent, it's my treat.
We prefer the tails over the whole tail, most of my crew isn't fond of cleaning their food before they eat it.
However, you can proceed with this same recipe for whole Maine Lobster using this recipe with the exception or puffing up the tails with just boiling, broiled and then in the garlic butter dipping sauce recipe.
I love serving lobster with Roasted Vegetables, Roasted Garlic Mashed Potatoes or Twice Baked Potatoes and with some delicious Tuscan Garlic Bread.
If you're a seafood lover you can also use this delicious garnish topping and the garlic butter for scallops and shrimp if you're not fond of lobster.
The recipe for both is super tasty on any shellfish or regular cod, haddock or other white fish.

Surf and Turf
As much as we love lobster in our family, we surely can't fill up on them (price-wise).
We always end up making "surf and turf" (which is a lobster and steak combo) usually broiling or grilling ribeye or a New York strip steak, as shown in the above photo with the addition of Chianti butter on top and perfect for any special occasion.

Lobster of All Kinds
Lobsters are a family of large marine crustaceans.
There are many kinds like Reef Lobsters. Spiny Lobsters. Slipper Lobsters. Furry Lobsters. Squat Lobsters.
We prefer the Maine lobster which is also called the Northern Lobster (Homarus americanus), and the American kind which seems to be the most costly but succulent as I am using in this recipe.

Broiled Lobster with Garlic Butter

This is how to make Maine lobster pretty outside of the shell puffed up with garlic butter. The lobster is boiled then broiled brushed with a delicious seasoning. A truly gourmet and fancy style lobster to serve.
ingredients:
- 2 to 4 tails approximately 8 ounces
- Water
- For Broiling:
- 2 lobster tails
- 1/4 cup butter, melted
- 1/4 teaspoon ground paprika
- sea salt to taste ground white pepper, to taste
- Garlic Butter Wine Dipping Sauce:
- 3 tablespoons butter
- 2 cloves garlic, minced
- 2 tablespoons fresh lemon juice
- 1 teaspoon dried tarragon
- 1/4 teaspoon salt
- 1/4 teaspoon white pepper
- 1/4 cup white wine
- 1 tablespoon fresh parsley

How to cook Broiled Lobster with Garlic Butter
- Preheat the broiler to 450 degrees.
- Boil or Steam the Lobster First:
- In a large saucepan with or without a wire basket (it's just easier to release them out of the water) boil enough water to just cover 2 tails.
- When the water is at a rolling boil add the lobster tails.
- Boil the tails for exactly 3 minutes.
- If you have a larger sized lobster (12-16 ounce in size) cook for 5 minutes.
- Take the tails out of the water and let them rest for a few minutes to cool on a cutting board.
- Use a pair of good kitchen shears, to slit the top of the shell to 1/2 inch from the end of the tail.
- Not all the way.
- Pull the meat out of the shell but leave the very end attached, that would be the end in the 1/2 inch you didn’t cut at the shell.
- Push the shell together and drape meat over the top of the shell carefully.
- Note: it should have a 1/2 inch inside the shell and 1/2 inch outside the shell.
- Should your shell not be stiff enough just drape over shell, push the shell together as tightly as you can.
- This will cause the lobster to puff up nicely when cooked.
- Put the tails on a wire rack over a broiler pan.
- Add about 1 cup of water in the broiled pan below the wire rack.
- Set the pan on the middle rack of your pre-heated oven.
- Lobster Butter Broiling Garnish:
- 2 lobster tails
- 1/4 cup butter, melted
- 1/4 teaspoon ground paprika
- sea salt to taste ground white pepper, to taste
- Preheat the broiler to 450 degrees.
- Cook time should be about 10 minutes
- Brush the tails, place under the preheated broiler watching closely that they don't burn if they cook too fast lower the rack.
- The tail will turn opaque white from translucent white.
- When the tails are done, the meat will be firm.
- Garlic Butter Wine Dipping Sauce:
- Melt the butter in a small saucepan over medium-low heat.
- Add garlic cook and stir until transparent, about 3 minutes.
- Season with tarragon, salt, and white pepper. Increase the heat to medium, and stir in the white wine and lemon juice.
- Bring to a simmer, then whisk for 1 minute.
- Remove from the heat and sprinkle in parsley.
- Dip lobster tail in the sauce when serving.
- Serve with Roasted Garlic Mashed Potatoes and Parmesan Roasted Vegetables.
