Molasses Cookie Bars

These simple Iced Molasses Spice Bars are the perfect bar to kick off fall and are great for any holiday dessert table.

If you're looking for an easy way to get that cinnamon spice aroma in your home while baking these are going to do the trick.

Bar Cookies Easy Steps

  1. preheat the oven to 350 degrees and line a brownie-sized or jelly roll pan with parchment paper
  2. whisk the dry ingredients together in one bowl
  3. in a clean bowl beat the sugar and butter and cream together then add the egg and vanilla with molasses
  4. slowly combine with the dry mixture until just blended together
  5. bake for around 20 minutes
  6. cool, frost, and enjoy

These are a delicious molasses spice bar iced with a creamy topping. Perfect for fall and holday themed cookie trays!

Ingredients

  • 1/2 cup butter melted
  • 3/4 cup granulated sugar
  • 1/4 cup dark brown sugar
  • 1/2 teaspoon pure vanilla extract
  • 1/3 cup molasses
  • 1 large egg
  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 1/2 tablespoons ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon salt
  • Icing:
  • 8 ounces of cream cheese softened
  • 4 tablespoons butter softened
  • 2 1/2 cups powdered sugar
  • 3/4 teaspoon vanilla
  • you may need just a little milk to make it easier to spread
  • Garnish: any holiday-themed sprinkles if desired or chopped raisins with coarsely chopped nuts

Instructions

  1. Preheat the oven to 350 degrees.
  2. Prepare a brownie pan lined with parchment paper.
  3. In a medium-sized bowl add the flour, baking soda, cinnamon, ginger, nutmeg, cloves, and salt and stir it to combine.
  4. In another clean bowl beat with an electric mixer the butter and sugar together for around 2 minutes. Add the vanilla and molasses and beat for another minute.
  5. Add the egg to this creamy mixture and blend well.
  6. Slowly combine the flour mixture with the creamed mixture just until blended.
  7. Spread into the prepared baking sheet.
  8. Bake for 20 minutes or until the middle is set using the toothpick method.
  9. Cool, frost, and serve.

Note: this is with a streusel topping added
