Avocado Bruschetta Topping and Guacamole Dip

Two recipes one for a topping for Bruschetta with a blend of olives, tomato, and mozzarella plus a recipe for Guacamole dip
Ingredients
- 2 ripe avocados cubed into small pieces or mashed
- 1 lime juiced
- 2 ripe vine tomatoes or chopped plum tomatoes
- 1/2 cup shredded mozzarella cheese
- 2 tablespoons kalamata pitted slices or chopped olives
- 2 tablespoons extra virgin olive oil
- sea salt and freshly cracked black pepper to taste
- 6 slices of Italian bread cut in half, or use a sliced baguette or stick French bread cut 1/2 inch thick and made into garlic bread
- Optional for more flavor add 2 tablespoons pesto sauce
- Garnish: fresh basil leaves, lime slices, drizzle with more olive oil
Instructions
- Mash avocado, add pesto sauce, oil, salt pepper, and some chopped basil on top for garnish if you like.
- Make the garlic toast and set it aside.
- Spread with avocado topping, and serve, garnish with fresh basil.
- For Avocado Guacamole Dip:
- 2 ripe avocados
- 1 teaspoon seasalt
- 1 1/2 teaspoons fresh lemon juice
- 1 teaspoon fresh lime juice
- 1 teaspoon Worcestershire sauce
- 3 cloves finely minced garlic
- 1/3 teaspoon cayenne red pepper
- 2 dashes of hot pepper sauce (optional)
- Wash, peel, pit, and mash avocados. Add finely minced garlic.
- Add remaining ingredients. This can be made in a food processor or using a blender.
- Serve with crackers and tortilla chips, sliced cucumbers, sliced zucchini, or any other vegetable you like for dipping.
- Makes about 1 1/2 cups.
