Trefoils or Shortbread ( copycat Girl Scout Cookies)

Trefoils are a copycat shortbread cookie from the ever-so-popular Girl Scout once-a-year cookie collection.

These buttery little rounds with a sugary topping are just the right break-time cookie with your favorite hot beverage or a cold glass of milk.

This classic cookie can never be considered a plain cookie with that buttery crisp old-fashioned shortbread flavor.

These copycat Girl Scout cookies are a vintage timeless classic.

I absolutely love these classic cookies, they're a perfect snack and delicious with tea or coffee any time of the day.

There is nothing better than the smell of these buttery rich little round shortbread gems and been popular Girl Scout cookies for years.

The best part about these cookies besides the taste, is they are super easy to make with very few tools!



Shop for the Ingredients

  1. 3/4 cup (1 - 1/2 sticks) butter, softened (no substitutions) 
  2. 1/2 cup brown sugar 
  3. 1 - 1/2 cup all-purpose flour 
  4. 2 tablespoons finely ground semolina flour
  5.  4 to 5 tablespoons heavy cream or more depending on how the dough comes together (should be a round smooth ball not dry not sticky) easy to handle 
  6. regular granulated sugar for sprinkling on top

Tips

  • Don't overbake these, just cook until the edges are light brown
  • add lemon or orange extract to flavor the cookies substituting vanilla
  • if you don't have a cookie cutter use a floured glass to cut them out
  • Store cookies in a tightly covered container for around 4 days
  • Cookies will freeze fine not rolled into powdered sugar for 3 months, thaw first and roll them


Topping suggestions for a holidays

  • use colorful sanding sugars top before baking
  • sprinkle with coconut
  • use holiday-themed sprinkles
  • add finely chopped nuts on top (brush with egg whites first)
  • change the flavor of the dough with different extracts
  • sprinkle with cinnamon and sugar mixture
  • add finely chopped colorful maraschino cherries in red and green for Christmas to the batter blotted dry

Ingredients

  • 3/4 cup (1 - 1/2 sticks) butter, softened (no substitutions)
  • 1/2 cup brown sugar
  • 1 - 1/2 cup all-purpose flour
  • 2 tablespoons finely ground semolina flour
  • 4 to 5 tablespoons heavy cream or more depending on how the dough comes together (should be a round smooth ball not dry not sticky) easy to handle
  • regular granulated sugar for sprinkling on top

Instructions

  1. Preheat oven to 300 degrees.
  2. In a large bowl, with a mixer at low speed, beat butter and 1/2 cup brown sugar until blended.
  3. Increase speed to high and beat until light and creamy, scraping the bowl with a rubber spatula add both kinds of flour.
  4. Add cream one tablespoon at a time till it forms a ball, dough should not be sticky.
  5. Roll dough out with very little flour on a board around 1/2 inch thick.
  6. Use any kind of cookie cutter you like.
  7. With small fork tines, prick dough in a decorative pattern (I just used the tines three or four times in a row.)
  8. Sprinkle with granulated sugar.
  9. Bake shortbread for about 15 to 20 minutes or until light and evenly browned around the edges.
  10. Let cool in the pan on a wire rack for 10 minutes.
