Peanut Butter Pattie (Copycat Girl Scout Cookies)

One of the most popular Girl Scout Cookies is these copycat Peanut Butter Patties, a delicious cookie stuffed with peanut butter, and dipped in chocolate.

Back in the early '70s, this is and still is my favorite cookie and I never can wait once a year when they're sold so until then I make my own copycat version!

The cookies are delicious and very similar.

Other companies have tried to duplicate these knockoffs, but nothing beats a homemade version and we love this one.

Delicious Popular Peanut Butter Pattie Girl Scout Cookies


I absolutely love these cookies, bring back memories of childhood in grade school and  I hate to admit, I would eat a whole box in one sitting they were so delicious.

The taste was different to me over the years and as much as I still love these cookies, the past is etched in my mind of these little peanut butter patties taste better to me back then.

Kids would sell them at schools, convention centers, grocery store parking lots, door to door, the boxes, marketing, prices, cookies, everything has changed since 1970 something, and now most orders are taken online! Not to mention how the cost has gone up to extremely high pricing so that's another good reason to bake these at home.

Easy Steps for Making Peanut Butter Copycat Girl Scout Cookies

  • mix the dough
  • bake into rounds
  • while warm makes a slight indentation
  • fill  with peanut butter and dip in melted dark or milk chocolate

Shop for the Ingredients

  1. butter softened 
  2. sugar 
  3. all-purpose flour 
  4. baking powder 
  5. pinch salt 
  6. pure vanilla extract
  7.  heavy cream



Tips

  • Don't overbake these, just cook until the edges are light brown
  • cookies can be dipped into milk or dark chocolate
  • use a good grade chocolate
  • melt the wax while the cookies are baking
  • Store cookies in a tightly covered container for around 2 weeks
  • Cookies will freeze perfectly after filled, dipped and the chocolate is dry

Suggestions and Garnishes

  • Dip into melted white chocolate then into sprinkles
  • Dip just the top instead of the whole cookie with melted white chocolate then into crushed roasted peanuts
  • Dip into melted white chocolate then sprinkle mini chocolate chips

Peanut Butter Tagalong Copycats

These are copycat peanut butter patties which are a popular Girl Scout Cookie

Ingredients

  • Dough
  • 1 cup butter, softened (10 seconds in a microwave)
  • 1/2 cup sugar
  • 2 cups all-purpose flour
  • 1/4 teaspoon of baking powder
  • pinch salt
  • 1 teaspoon pure vanilla extract
  • 3 tablespoons of heavy cream

Instructions

  1. Using an electric mixer place all ingredients in order in a heavy-duty bowl, and blend all together until a dough forms a ball.
  2. Chill for at least an hour on wax paper.
  3. Take the dough out, and shape it into small uniform balls.
  4. Flatten 1/4 inch with your index and middle fingers or use the back of a glass dipped lightly in flour.
  5. Shape to be perfectly round with fingers if it gets out of shape.
  6. Bake on a sprayed cookie sheet or parchment paper until light brown edges approx. 9 to 11 minutes.
  7. Watch carefully not to brown.
  8. Immediately upon taking it out of the oven, form a well in the center with the back of a spoon or use your fingers covered in a cloth so as not to burn yourself.
  9. Cool completely. Start melting pariffin wax see directions below...
  10. When cooled completely, fill the top well of each cookie with creamy peanut butter, I used a cheese spreader.
  11. Place the cookies one at a time in the melted chocolate coating using two forks (see below dipping chocolate for instructions).
  12. Dry on a wax paper-lined cookie sheet and place in the refrigerator until firm. Enjoy~
  13. Melt a half bar of wax in the microwave in a microwave-proof glass bowl, this takes about 8 minutes, do this step while the cookies are cooling.
  14. Dipping Chocolate
  15. 2 - 12 oz bags of dark chocolate, milk chocolate chips good grade chocolate
  16. 1 bar of cooking paraffin wax cut in half
  17. After the wax melts add the bag of chips to it stirring till the chips melt, place in the microwave for about another minute to ensure is liquid is flowing easily to coat the cookies.
  18. The bowl with keep it liquified for quite a while for easy dipping.
  19. Dry on a wax paper-lined cookie sheet and place in the refrigerator until firm.
